Kadala Maavu Sambar | Instant Sambar for Idli Dosa
Kadala Maavu Sambar is an easy and instant sambar based using tamarind water, Besan flour (Kadala Maavu) and spices. This is made using least number of ingredients and within 20 minutes. A perfect accompaniment for Ven Pongal, Idli and Dosa. This is also called Bombay Sambar.

¼tspTurmeric Powder

For Tempering
1tbspSesame Oil
1tspMustard seeds

Preparation
Soak the tamarind in the warm water and extract the juice and keep it aside.
Chop the onion & tomato roughly and set it aside.
Start with Tempering
Heat the oil in the pan. Once the oli is hotadd the mustard seeds. When the mustard seeds begins to sputter add fenugreek seeds and the curry leaves
Cooking Kadal Maavu Sambar
Add onion and saute the onions till it turns transparent.
Then, add the tomato, pinch of Turmeric powder and saute them till the tomato is mushy.
When the tomato is cooked add the extracted tamarind juice, Also add Red chili powder and salt.
Boil the tamarind extract for about 10 minutes.
Mix 1 tbsp of Besan flour with 1/2 cup of water and keep it ready.
Once the Kuzhambu start to boil, add besan mixture and stir well to avoid lumps. Add water to adjust the consistency of the sambar.
Boil for couple of minutes and switch off the flame. Kadala Maavu Instant sambar is ready to serve with Idly/Sambar.
