Zucchini Bajji is one of the perfect evening snack. Bajji is an easy Indian evening snack. Most of us just take a potato or raw banana or onion and make bajji out of it. With many veggies, we can try making bajji. My MIL used to make Brinjal Bajji. I happen to taste Zucchini (சீமை சுரைக்காய்) bajji in my neighbor's home. It was so tasty, so next day,  I tried Zucchini bajji in my kitchen and it turned out awesome. Try this delicious Zucchini Bajji (Zucchini Fritters) for an evening snack and I bet, you will also love it.

Few variations in making of the Zucchini Bajji

  1. The readymade Bajji mix is very popular and comes very handy. You can very much use the same to make Zucchini Bajji (or any other Bajji).  I personally like to make the fresh mix/batter while making Bajji.
  2. You might wonder why the bajji which we get in the Restaurants / tea shops are very fluffy while the one we make in home is no coming out fluffy.  Well, the ingredient here is baking soda. I don't recommend  adding baking soda, but it's okay to add a pinch of it while making bajji to get the fluffy an soft texture
  3. Also, I noticed some adding a teaspoon of ghee in the mixture for the extra flavor. I haven't used it personally. But you can try and let me know your views.
  4. You can cut this lengthwise and make the bajji like Vazahakkai Bajji (Raw Banana Bajji)
  5. Raw Banana Bajji is very popular.. however you can use the vegetable of your choice. You can refer the recipes below for other Bajji varieties

Bajji is a very popular evening snack. Instead of using regular vegetables, we can try to use vegetables like Zucchini ((சீமை சுரைக்காய்) for making Bajji to create a difference and get a 'wow' from the guests and family. Many doesn't know the Zucchini is a perfect vegetable for Bajji, it tastes awesome and melt in your mouth.  Heard that Zucchini is a zero calorie vegetable and it's not expensive as well. Zucchini Bajji is perfect for the evening snack.

Ingredients

  • 1 number Zucchini (சீமை சுரைக்காய்)
  • 1 cup Gram Flour (Besan / Chickpea Flour) 1 cup = 250 ml
  • ½ cup Rice Flour
  • 1 teaspoon Red Chili Powder
  • ⅛ teaspoon Baking Soda
  • ¼ teaspoon Asafoetida (Asafetida / Hing)
  • ½ teaspoon Salt adjust to your taste
  • Cooking Oil for Deep Frying

Instructions 

  • Wash and slice the Zucchini and keep it aside
  • Heat oil in a pan for deep frying the zucchini banjo
  • In a mixing bowl, take gram flour, rice flour, red chili powder, salt, asafoetida and baking soda and mix everything well
  • Add water little by little and make it to a batter. The consistency of the batter should be like dosa batter
  • Test the hotness of oil by dropping a pinch of batter. If the batter rises immediately with sizzling sound, then oil is ready
  • Add zucchini slices and coat it completely and gently drop it in oil. Deep fry the bajjis on both the sides till they are golden brown and all the bubbles ceases
  • Serve the delicious crispy Zucchini Fritters and enjoy the evening!

Notes

Baking Soda is optional. Baking Soda gives fluffy and soft bajji.
You can also add a teaspoon of ghee in the batter to get a nice flavor
You can also use store bought readymade Bajji Mix to make this recipe

Method  :
