Take the left over chapati/roti. Roll it tightly and slice the chapati. Keep the Roti slices aside.

Heat oil in a pan. Add mustard seeds and cumin seeds. Allow it to sputter.

Add onions and sauté the onions till translucent. Add ginger-garlic paste and sauté along with onions

When the onions are transparent, then add chopped tomato to the pan and give a good mix.

When the tomatoes are mushy, add shredded cabbage, sliced carrots, capsicum and give a good mix.

Now, add turmeric powder, sat, red chili powder and coriander powder. Give a good mix.
1 teaspoon Red Chili Powder, 1 teaspoon Coriander Powder, ½ teaspoon Salt
Close the pan with a lid and allow the veggies to get cooked and becomes tender. Open the lid occasionally and mix the veggies so that it doesn't get burnt.
When the veggies are almost cooked, add the sliced roti.
Also add garam masala and few curry leaves. Add handful of water and give a good mix. Cover the pan with a lid and allow everything to get cooked for couple of minutes.

Finally garnish with coriander leaves.
