Sagu Recipe | Mixed Vegetable Saagu
Vegetable Sagu is a very simple Karnataka style Curry with mild spices and with flavor of coconut. A Perfect accompaniment for Idli / Dosa / Roti

Pressure Cooker

Grinding Ingredients
- 1 tablespoon Coriander seeds
- 1 teaspoon Fennel Seeds
- 2 Red Chili
- ½ teaspoon Peppercorns
- ½ teaspoon Cumin Seeds
- 1 inch Cinnamon Stick
- 4 Cloves
- 3 Cardamom
- 1 teaspoon Poppy Seeds
- 2 tablespoon Grated Coconut
- ½ teaspoon Grated Ginger
- 2 Garlic cloves
For Gravy
- 1 Big Size Onion
- 1 Green Chili
- 2 Cups Mixed Vegetables carrot, peas,beans,capsicum,potato etc
- ½ teaspoon Turmeric Powder
- 1 teaspoon Salt Adjust As Needed
- 1 tablespoon Oil
- 2 tablespoon Butter
- 1 tablespoon Coriander Leaves
Preparing Grinding Ingredients
Grinding Process
Take the roasted ingredients in the mixer jar. Again place the pan on the flame and dry roast the coconut. Take the roasted coconut to the mixer jar
Throw in ginger and garlic to the mixer jar. Grind them all to a smooth paste by adding little water. Keep the ground paste aside
Sauté Process
Heat a heavy bottomed pan, add oil. When the oil is hot, add onions and chopped green chilli. Sauté the onions till they are translucent
When the onions are sautéed well, add butter. Then, add the mixed veggies to the pan. Stir-fry in high flame for couple of minutes
Now, add turmeric powder, salt, ground spice paste along with 1.5 cups of water and give a good mix. Switch off the flame
Pressure Cooking Process
Take the prepared gravy in a vessel and pressure cook for 3-4 whistles.
After pressure is released, take out the cooked Saagu and garnish with fresh coriander leaves
- We can make little thicker in consistency when serving with Roti and lighter consistency when served with Idli/Dosa
- Poppy Seeds are optional we can replace with cashew. Both Cashew and poppy seeds makes the gravy richer and thicker
- We can add few mint leaves and coriander leaves to make more flavorful gravy
