Ulli Vadai | Onion Vada | Onion Dumplings | Onion Fritters

Ulli Vada, a very popular street snack in many places of TamilNadu, especially in Nagercoil. The aroma of the fried onion with fresh masala is very appetizing and its a great accompaniment for the evening coffee/tea.

Equipment

  • Heavy Bottomed Pan

Ingredients

  • 3 Big Size Onion
  • 3 Green Chili
  • 1 Cup Gram Flour (Besan / Chickpea Flour) 1 Cup - 250ml
  • ½ Cup Rice Flour
  • 1 teaspoon Fennel Seeds
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Salt Adjust As Needed
  • ½ teaspoon Baking Soda
  • ½ Cup Coriander Leaves
  • Few Curry leaves
  • 3 Cups Oil For Deep Frying

Instructions

Preparing Vada Batter

  • Finely chop the onions vertically and add ½ teaspoon of salt and keep it aside for 5 minutes. The adding of salt brings out the moisture from onions which is used to mix the flours
  • Finely chop the green chillies and add it to the chopped onions
  • Add besan flour, rice flour, red chilli powder, salt, turmeric powder, fennel seeds, coriander leaves , baking soda and curry leaves to the onion and mix well and knead it nicely only using moisture from onions. We don't need to add water for binding the dough. The moisture content in onions is enough to get a thicker dough. If only required you can sprinkle water to bind the flourand onion

Deep Frying Process

  • Heat oil in a pan. Test the hotness of oil by adding a pinch of dough. If it sizzles up immediately, then the oil is in the right hotness
  • Take small amount of dough and make it a ball and drop it gently in the oil. 
  • Keep the flame in medium and fry the vadas evenly in all sides
  • Remove the fried ulli vadas from oil and place it in a plate having paper towel to drain the excess oil

Serving Time!

  • The yummy, spicy and crispy Ulli Vada (Onion Vada) is ready to Serve with Hot Tea / Coffee. We can make Coconut chutney or Coriander-Curry leaves chutney and serve with Ulli vadas

Notes

  1. Use the moisture from onion to bind the flours and onion. If we add water, we might get hard vada.
