Vazhakkai Mezhukkupuratti | Kerala Style Raw Banana Stir Fry
Mezhukkupuratti is one of the typical Kerala Stir-Fry made with vegetables like Raw Banana, Yam, Potato or any other vegetables. This Stir-Fry is a very delicious and easy to make side dish for any South Indian Main Courses.

Ingredients

Instructions
Preparing Raw Banana
Peel the Raw Banana, chop into small cubes. Add Water to the chopped Raw Banana along with a teaspoon of salt. Let the veggie set aside for 10 mins. Raw Banan will absorb salt from the water and also avoid the decolorization of the vegetable.
Cooking Mezhukkupuratti
Heat oil in a pan. Add mustard seeds and allow it to sputter. Then add curry leaves, slit green chili and fry for few seconds
Now, add the chopped onions along with pinch of salt and saute the onions in low flame till they are light brown
To the sauteed onions, add red chili powder, turmeric powder and coriander powder and stir-fry for a minute
Then, drain water from the chopped raw banana and add it to the pan. Add salt and mix well so that the raw banana gets nicely combined with the spice powders.
Cover & cook in low flame till the raw banan is soft. Open the lid and stir occasionally to prevent raw banana getting burnt or sticking to the bottom of the pan. Only if required sprinkle some water.
Once the Raw Banana is fully cooked, switch off the flame.

Instead of adding red chili powder, we can grind shallots(baby onions), garlic and red chili without adding water and add it to the mezhukkupuratti
