Seppankizhangu (Arbi / Tara Root) is a popular root vegetable. The stir fry made using Seppankizhangu is very tasty. This can be made using many variations depending on individuals taste and liking. The recipe given below is one of the most simplest method of making Arbi stir fry

- 300 grans Tara Root (Seppangkizhangu / Arbi)
- 2 tablespoon Cooking Oil
- ¼ teaspoon Turmeric Powder
- 1 teaspoon Sambar Powder
- 1½ teaspoon Salt adjust to your taste
For Tempering
- 1 teaspoon Cooking Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Split Urad Dal
- 1 sprig Curry leaves
Making of Stir fry
Add the chopped tara root. Add one tablespoon of oil and mix well. Add turmeric powder, sambar powder and give a good stir
Cover the pan and allow it to cook in the medium flame. Check intermittently if the tara root has cooked well. For me it only took 5 minutes to cook.
Once it's cooked, add another table spoon of oil and mix well. Simmer the stove and allow it to cook for another 5 more minutes without covering the pan. This will help to get the tara root more crispier.
The delicious Seppangkizhangu Vathakal is ready to serve!
- You can also add a tablespoon of thick tamarind juice which reduces the stickiness of the Arbi.
