Equipment

Ingredients

  • 2 Cups Curry leaves Tightly Packed. 1 Cup - 250ml
  • 4 Red Chili
  • 3 tablespoon Urad Dal
  • 1 tablespoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • ½ teaspoon Peppercorns
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Salt Adjust As Needed
  • ½ teaspoon Asafoetida (Asafetida / Hing)
  • ½ teaspoon Tamarind Paste or 1 tamarind see Size dry tamarind

Instructions

Preparing Curry Leaves

  • Wash the curry leaves thoroughly. Spread the washed curry leaves in a clean towel and keep it in shady place and allow it to dry completely. 

Preparing Grinding Ingredients

  • Dry roast the Dals, red chillies, peppercorns, cumin seeds and tamarind and fry till the Dals becomes golden brown color. Take this aside
  • Heat a pan, and dry fry the curry leaves till it becomes crispy and take this aside

Grinding Process

  • First grind the dals and spices along with salt to a coarse powder. 
  • Then, add curry leaves and grind everything to a smooth powder

Storing and Serving

  • The mouth-watering curry leaves powder is ready to serve. Store it in air-tight container. You can keep it in refrigerator to maintain the freshness
  • Serve the delicious Kariveppilai Podi (Curryleaves Powder) with hot rice with one spoon of ghee
