Equipment

  • Pressure Cooker
  • Heavy Bottomed Pan

Ingredients

  • 6 nos Potato Medium size
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • ½ teaspoon Amchoor Powder (Dry Mango Powder)
  • 1 teaspoon Salt
  • 2 tablespoon Coriander Leaves

For Tempering

  • 2 tablespoon Ghee (or cooking oil)
  • 1 tablespoon Cumin Seeds
  • 2 nos Green Chili finely chopped
  • 1 inch Ginger julienned

Instructions

Cooking Potato

  • Wash and take potatoes in a vessel. Place it in pressure cooker and pressure cook for 3 whistles.
  • Allow the pressure to release naturally and take out the cooked potato, drain water. Add cold water and peel the potatoes.
  • Cut the potatoes into medium size cubes and set it aside.

Tempering

  • Heat fhee in a pan. Add cumin seed and allow it to sputter.
  • Then add chopped green chili, ginger and saute for a min.
  • Next, add turmeric powder, red chili powder, coriander powder and amchoor powder. Mix the spices well.
  • Now, add the cubed potatoes to the pan along with salt and toss well with the spices.
  • Allow the potato to get cooked in low flame with all the spices for about 2 mins.
  • Finally garnish with fresh coriander leaves.
