Pressure Cooker
Heavy Bottomed Pan
- 6 nos Potato Medium size
- ¼ teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Coriander Powder
- ½ teaspoon Amchoor Powder (Dry Mango Powder)
- 1 teaspoon Salt
- 2 tablespoon Coriander Leaves
For Tempering
- 2 tablespoon Ghee (or cooking oil)
- 1 tablespoon Cumin Seeds
- 2 nos Green Chili finely chopped
- 1 inch Ginger julienned
Cooking Potato
Wash and take potatoes in a vessel. Place it in pressure cooker and pressure cook for 3 whistles.
Allow the pressure to release naturally and take out the cooked potato, drain water. Add cold water and peel the potatoes.
Cut the potatoes into medium size cubes and set it aside.
Tempering
Heat fhee in a pan. Add cumin seed and allow it to sputter.
Then add chopped green chili, ginger and saute for a min.
Next, add turmeric powder, red chili powder, coriander powder and amchoor powder. Mix the spices well.
Now, add the cubed potatoes to the pan along with salt and toss well with the spices.
Allow the potato to get cooked in low flame with all the spices for about 2 mins.
Finally garnish with fresh coriander leaves.
