Heavy Bottomed Pan
- ⅓ Cup Rice Flour 1 Cup - 250ml
- ⅓ Cup Gram Flour (Besan / Chickpea Flour)
- ⅓ Cup Roasted Gram Dal (Pottukadalai / Dhaliya)
- 1 tablespoon Ghee
- 1 Pinch Baking Soda
- 1 nos Onion Thinly Sliced
- 1 Green Chili Finely Chopped
- 1 inch Ginger Finely Chopped
- Few Curry leaves
- 1 tablespoon Coriander Leaves
- ½ teaspoon Red Chili Powder
- 1 teaspoon Salt Adjust As Needed
- 2 Cups Oil For Deep Frying
Preparing Pakoda Mixture
In a mixing bowl, add ghee and baking soda. Beat well with a whisk till the ghee is combined well with the baking soda
Add rice flour, besan, ground roasted gram flour to the ghee mixture. Using finger tips mix the flours nicely with the ghee+baking soda mixture
Now, add salt, red chili powder, chopped ginger, green chili, curry leaves and coriander leaves.
Add sliced onions and mix everything well. Add water little by little and start mixing the flours
The flours gets nicely mixed with onions and other spices and becomes like a roti dough.
Make small lemon size balls out of the pakoda mixture. Pakoda dumplings are ready to get deep fried
Deep Frying Process
Heat oil in a heavy bottomed pan. When the oil is hot enough, gently drop 3-4 pakoda balls in the oil
Deep fry the pakoda's in low-medium flame till the pakodas' become golden brown and crispy.
Repeat the process and fry the rest of the pakodas'
