Heat 1 teaspoon of ghee in a pan. Add cashews and fry in ghee till it is light golden color.

Now, add sooji to the pan. Fry the sooji till you get a good aroma.
1 Cup Semolina (Sooji / Rava)
Next add grated coconut and give a good mix.

To the pan, add 2 cups of hot water and give a good mix. Keep stirring to avoid cups and cook the sooji till its soft.

Now, add sugar and cardamom to the cooked sooji. Give a mix. Sugar dilutes the cooked sooji.

Keep stirring till the sugar gets incorporated and the sooji gets thicker. Add 1 tablespoon of ghee and give a final mix.
Allow the kesari to cool down and then make small lemon size balls out of the kesari and keep it on a plate.
Now take the maida dough, make small lemon size balls out of the dough and keep it on plate.
Take one dough ball, spread it like a small poori. Now place a filling and gently close and seal the filling.
Now again using ghee greased hand, spread it gently to a small poori. Repeat the same and make rest of the poori.
Heat oil in a pan. When then oil is hot, drop 2-3 poori in hot oil. Keep the flame in medium, allow the poori to fry till light brown.
3 Cups Oil
Flip the poori and cook till the poori becomes golden brown. Remove the poori from oil and place it on paper towel to drain excess oil.
Repeat the same and fry all the sojji appam.
Delicious Sojji Appam is now ready to serve!
