Nippattu Recipe | Karnataka Style Crispy Thattai

Nippattu is a popular Indian snack in Southern Part of India especially in Karnataka. It's a Karnataka Style Thattai. It is a very crunchy and tasty snack. There are many variations to this recipe, and this is one method of doing Nippatu. It is made of rice flour along gram flour, maida along with peanuts and roasted gram dal. Very simple savoury to make for any occasions or simply during evening hours. There is no hassle of using any press and mould. In Tamilnadu, we make thattai using rice flour and urid dal flour. We also make tattai using parboiled rice and roasted gram dal. Nippatalu is more or less same as our thattai but only slight variations. We can easily make this crispy and crunchy snack for  this festivals like Diwali or as an evening snack to relish with hot tea/coffee!

Tips for making Nippattu:

  1. We can use store bought rice flour or we can soak the rice for 30 mins, spread in a towel, allow it to dry till it is 90% dry and then grind it in mixer grinder to a smooth flour. The flour is then sieved twice to get most smooth flour.
  2. Maida is optional. Instead we can add roasted gram flour.
  3. Instead of adding roasted gram dal directly, we can soak chana dal for 15 mins and the soaked dal.
  4. Once you shape each thattai, using fork, make some holes. This will help the oil to seep in and fry the thattai perfectly.
  5. While deep frying, keep the flame low and then fry the Nippattu till its golden brown.
  6. Allow the fried Nippattu to cool off completely before storing in air-tight container.

Nippatu is Karnataka Style Thattai Recipe. This version of thattai is different from our TamilNadu Style Thattai. Nippatu is a deep fried crispy snack made with rice flour, maida and besan along with other spices. Learn here how to make this Nippatu with step by step pictures and instructions.

Ingredients

  • 2 Cups Rice Flour 1 Cup - 250ml
  • ¼ Cup Maida (All Purpose Flour)
  • ½ Cup Gram Flour (Besan / Chickpea Flour)
  • 2 tablespoon Roasted Peanuts
  • 2 tablespoon Roasted Gram Dal (Pottukadalai / Dhaliya)
  • 2 teaspoon Cumin Seeds
  • Few Curry leaves
  • 1 teaspoon Salt
  • 2 Cups Oil For Deep Frying

Instructions 

  • In a mixing bowl add all the ingredients other than oil and mix well. Grind the roasted peanuts to coarse powder. Add this peanut powder to the bowl of ingredients. Add water little by little to make a soft and smooth dough.
  • Make small lemon sized balls out of the dough. Take each ball and place it on a greased plastic paper. Then cover it with another plastic cover and place a flat lid or bowl on top of the ball.
  • Press the lid or bowl to make a thin circle like thattai. We are using lid or bowl to get all thattai in same shape. We can also use hands to press the dough balls to make thattai. But using lid or bowl to press will make all the thattai looks even and same thickness. Repeat this step for the rest of the dough.
  • Using a fork prick each thattai in few places. This will prevent the bubbles forming up in hot oil. Let the thattai gets dried up for few minutes. Meanwhile, heat oil in a pan and when the oil is hot enough, keep the flame in medium and add 3-4 thattai in oil. Deep fry them till they are crispy and the sizzling sound starts to suppress. Remove the crispy nippatalu from oil and place it in paper towel to drain excess oil. Repeat the same step till all the nippatalu are fried.
  • Tasty and crispy Nippatalu (Andhra Thattai) is now ready to serve!
