Home made Tomato Soup is a healthy appetizer. It is one of the favourite Soup for all age groups starting from kids to elderly people. There’s really nothing more comforting than a steaming hot bowl of tomato soup.There are lots of ways to season up a good tomato soup, but sometimes you just want the classic – bursting with tomato flavor, silky smooth, and not complicated by much else. Serve this soup with bread croutons or with a great grilled cheese sandwich/garlic bread to make this a very happy lunch.

Tips for making Classic Tomato Soup:

  • Always use fresh red ripe tomatoes to get more tastier soup.
  • You can also add a pinch of red chilli powder / paprika powder to get a good color.
  • Fresh cream is optional. We can serve the soup as a thin consistency also.
  • Always prepare the soup and serve it as hot piping soup.
  • If you don’t have ready made bread croutons, you prepare the same in home. Take 4-5 bread slices and chop it to small cubes. Heat a tawa, add olive oil or ghee and add the bread pieces along with salt and toss it till it is crispy. We can use these crispy home made bread croutons while serving tomato soup.

Ingredients

  • 10 medium size Tomato Ripe tomatoes are best for this recipe.
  • 1 tsp Salt Adjust as needed
  • ¼ tsp Peppercorns
  • 1 no Onion finely chopped
  • 2 nos Garlic cloves Chopped
  • 1 no Carrot
  • ¼ Cup Coriander Leaves
  • 1 tbsp Butter
  • 1 Bay Leaf
  • 1 inch Cinnamon Stick
  • 3 Cloves
  • 1 tbsp Fresh Cream
  • 10-15 Bread Croutons For Garnishing

Instructions 

  • Heat a pan, add butter. When the butter melted, add bay leaves, cinnamon stick and cloves and fry for 10 seconds. To this add chopped onion and garlic and fry it till it turns transparent. You can add a pinch of salt to fry the onions evenly and quickly.
  • Now add chopped Carrot and fry for 2 minutes. Finally add chopped tomatoes and mix well. Add salt and chopped coriander leaves and allow the tomatoes to fry for 2 minutes.
  • Add whole black pepper and Add 2 cups of water and allow the tomatoes to cook completely. Keep the flame in medium.
  • After 5 minutes, the tomatoes would have cooked completely and becomes mushy. Remove the pan from flame. Using a blender (or mixer), blend the tomato mixture to a smooth juice.
  • Clean  the pan and strain the blended tomato soup to the pan. Bring the tomato soup to boil. Keep the flame in medium and allow the tomato soup to boil for 5 minutes. 
  • Then add fresh cream and stir well with a whisk. Keep stirring and do not allow the tomato soup to boil. Keep the flame very low. Adjust salt keep stirring in low flame for 10 more minutes. Then remove the soup from flame.
  • Take a bowl and add bread croutons(optional). Add tomato soup to the bowl. Again add 1 teaspoon of fresh cream and coarse pepper powder and serve the yummy piping hot Tomato Soup!

This is nice mami. But a little variation is to use 1/4 cup of cream to make it creamier. Also milk would do, but do not let it boil otherwise it may curdle.
Some people use even coconut milk to make it creamy
