Method:
- Finely chop the onions. Heat oil in a pan and finely chopped onions, garlic, ginger and sliced green chilli. Sprinkle little salt and saute the onions till they turn soft but not brown. The addition of salt brings out moisture from onions and helps to saute the onions evenly with less oil. When the onions are cooked and become soft and transparent, add rinsed dal to the onions
- Add the coriander powder and paprika powder and mix well. Then add coconut milk to the pan
- Add water to the pan and mix well and bring it to boil. When the soup starts to boil, give a good stir and simmer the flame and allow all of them to cook in low flame for 40-45 minutes. In low flame, the lentils would cook nicely and becomes mushy.
- Remove the soup from flame. Since the dal is cooked and mushy, we don’t need to blend it. But if you like a clear sour without munching any bits and pieces, then just blend all of the cooked soup once using a hand blender or normal blender. I have used a hand blender and gave a couple of pulses so that I have got a nice and smooth soup. Pour in the lime juice and adjust the salt and sprinkle coarse pepper powder. Add half of the chopped spring onion leaves and mix well. Finally garnish with chopped coriander leaves
- Pour the yummy Red Lentils with Coconut Milk Soup Recipe in a serving bowl and garnish with little spring onion leaves and coriander leaves and enjoy the delicious soup!

My suggestion is to add coconut milk once dal is done in order to preserve the flavour and nutritive values.
