Ram Ladoo is a savoury snack and a popular Street food snack in Delhi. It is also known as Gulgule. Its a very popular chaat in Lajpat Nagar's central market in Delhi. Its a delicious savoury Ladoo made with moong and bengal gram dal along with other Indian Spices. Especially the serving part is the delicious garnishing. The ladoos are garnished with green chutney, grated radish, coriander leaves, chaat powder and lemon juice. Adding of julienne Radish makes this so unique with its strong and sharp flavor. A perfect tea time snack!

Tips for making Ram Ladoo:

  1. We can make only with moong dal instead of adding channa dal. Chana dal gives a nice texture and crispy outer cover.
  2. Wash and soak the dals atleast for 3 hours.
  3. Do not add water while grinding the dal. Only if needed, add water little by little and grind it to thick batter.
  4. Using a whisk or a ladle, beat the batter for atleast 5 mins to get fluffy batter.
  5. While deep frying, keep the flame low and deep fry the ram ladoos till they are golden brown.
  6. Garnish with julienne radish, coriander leaves, green chutney and tamarind chutney.

Ingredients

  • ¾ Cup Moong dal 1 Cup - 250ml
  • ¼ Cup Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 2 nos Green Chili
  • 1 inch Ginger
  • ¾ teaspoon Salt Adjust as needed
  • ¼ Cup Coriander Leaves Finely Chopped
  • 2 Cups Oil For Deep Frying

For Garnishing

  • 1-2 tablespoon Green Chutney
  • ¼ Cup Radish Grated
  • ¼ Cup Coriander Leaves
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Chaat Masala

Instructions 

  • Wash the dals thoroughly and soak in water for 3-4 hours. After 3-4 hours, drain the water and take the dals in the mixer jar.
  • To the dals add green chili and ginger and grind it to a coarse paste.
  • Take the coarse dal paste in a mixing bowl. Add salt, coriander leaves and mix well. Using the spatula mix well for 3-4 minutes just to make sure the mixture gets some air in it. You can also use an electric whisk to incorporate aeration in the ladoo mixture.
  • Heat up oil to deep fry the ladoos. When the oil is hot enough, wet your hands and take small ball out of the ladoo mixture and gently drop in oil. Add 4-5 ladoos depending upon the size of the pan. Do now overcrowd the oil. Keep the flame in medium and fry the ladoos till they are golden brown and crispy. Take out the fried ladoos and keep in on paper towel to drain excess oil.
  • So the Ram Ladoos are now ready to serve. Take a serving bowl. Add 2-3 ladoos. Pour green chutney. You can also add sweet chutney too. Then add grated radish, some chopped coriander leaves, squeeze out lemon juice and sprinkle some chaat masala powder and serve the hot Ram Ladoo and surprise your family and friends!
