Paneer Bhurji Masala Recipe

Paneer Bhurji is a very famous dish. Crumbled Paneer are cooked with spices and its a perfect breakfast dish or accompaniment for Indian Bread. Paneer Bhurji masala, is concocted with crumbled paneer, onion-tomato-cashew gravy. This is a very rich and delicious vegetarian gravy that is a perfect accompaniment for any Indian Bread. Most of is like paneer so much and this would be a great paneer dish to impress your family.

Paneer Bhurji Masala Recipe 
Ingredients:
Paneer 350gms
Onion 2 sliced into 4 pieces
Tomato 2 Chopped
Cashews 15
Cinnamon 1" piece
Cardamom 3
Cloves 4
Peppercorns ½ teaspoon
Red Chilli 3
Ginger-Garlic Paste 1 tablespoon
Turmeric Powder ¼ teaspoon
Coriander Powder 1 teaspoon
Red Chilli Powder 1 teaspoon
Salt To taste
Finely Chopped Coriander Leaves ¼ Cup
Oil 2 tablespoon
Kasoori Methi (Dry fenugreek leaves) 1 tablespoon (Optional)

For Seasoning:

Ghee 2 tablespoon
Cumin seeds 1 teaspoon

Method:
  1. Heat a sauce pan and 2 cups of water. Peel & Quarter the onions and add it to the boiling water along with cashews. Cook the onions fro 5 minutes or until soft. Drain the water and allow the cooked onions and cashews to cool
  2. Add the cooked onions and cashews to the mixer jar and grind it to a nice paste
  3. In a sauce pan, add oil. Add cinnamon, cardamom, cloves, peppercorns, red chillies and saute it for few minutes. Add ginger-garlic paste and saute for few seconds
  4. Add chopped tomatoes and cook everything till the tomatoes are mushy 
  5. Cool the tomato mixture and add it to the jar. Grind it to a smooth paste and set it aside
  6. Take cubed paneer in a bowl. Add hot water and allow it to sit for 10 minutes. Then drain the water and crumble or grate the paneer and set it aside
  7. Heat ghee in a sauce pan, add cumin seeds and allow it to sputter. Then, add onion-cashew paste and cook in low flame for 5 minutes.
  8. Then add tomato-spice paste and cook for another 5 minutes. To this gravy, add turmeric powder, coriander powder, red chili powder, salt and mix well. 
  9. After 5 minutes, add crumbled paneer and mix well. You can crush kasoori methi and add it to the mixture at this stage. Finally add chopped coriander leaves and transfer it to the serving bowl
  10. Serve the tasty and delicious Paneer bhurji masala with roti and enjoy the dish!
