Ingredients

Adjust Servings:
5 Green Capsicum small ones will be best
1/2 Cup Oil
For Stuffing
4 Big Potato
1 Onion
1/4 Cup Cashew 1 Cup - 250 ml
1/2 Teaspoon Turmeric Powder
1 Teaspoon Red Chili Powder
1/2 Teaspoon Garam Masala
To Taste Salt
For Tempering
3 Tablespoon Oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
1, Chopped Green Chilli

Delicious spiced potato stuffed bell peppers, is a flavourful and tasty exotic snack or side dish. Capsicums are hollowed, removing the pith and the seeds and the shells are stuffed with a spicy mixture of Potato Masala.  This yummy dish goes very well on the side of any Indian Bread. Stuffed Capsicums are considered rather exotic and are more palatable, which makes them a very good option for serving in parties.

We can any veggies to stuff inside bell pepper. Instead of Potato filling we can make Paneer Burji Masala or mixed vegetable Masala and cook the paneer / veggies, stuff inside capsicum, saute the capsicum and then bake for 25 mins. Also along with any masala stuffing, we can add cheddar or mozzarella cheese and bake the capsicum. Then the Stuffed Capsicum will be really tasty and cheesy. Kids will love cheesy Stuffed Capsicum more than the plain filling. I was running out of cheese when I made the video so I skipped adding cheese.

This Stuffed Capsicum looks so appetizing and can be served as a starter for any potluck or parties.

Cooking Potatoes

Wash and Pressure cook potatoes with the skin for 2-3 whistles. Once pressure is released, remove the skin and coarsely mash the potatoes.

Tempering Process for Potato Masala

Heat oil in a pan. Add mustard seeds and cumin seeds and allow it to sputter. Add green chili and saute for few seconds

Preparing Masala

To the pan, add chopped onion and saute onions till translucent. Add turmeric powder, red chili powder and garam masala and give a good mix. Let the masalas gets cooked for 2 mins.

Add cashews, salt and cooked and mashed potato and mix everything well. Adjust salt if needed, switch off the flame. Finally add lemon juice and coriander leaves and give a final mix and Potato Masala Filling is all ready!

Preparing Capsicum

Take the capsicum and wash thoroughly. Slice off the tops. Using a small sharp knife, carefully remove the white pith and seeds

Filling Capsicum

Once the capsicums are hollowed, fill each one with the potato filling till the brim of top

Sauteing Capsicum

Heat oil in a pan. Place the capsicum inside the pan and shallow fry the capsicum in all of the sides for about 5 mins. Gently turn each capsicum on their sides using a tong.

Baking Process

Take out the sauteed stuffed capsicum and place in a cake tin and bake in pre-heated oven at 350 deg F or 170 deg C for 25 mins.

Serve the mouth-watering Potato Stuffed Capsicum with Tomato chutney or ketchup and serve as a starter or serve it as an accompaniment for Roti.
