Vegetable Oats Adai Recipe
Many of us like Adai Aviyal combination or plain Adai with jaggery. I always love to eat adai with jaggery. This week in healthy corner, I thought of making Vegetable Oats Adai. Instead of the traditional rice and dal adai, Oats adai is healthy and yummy. Oats gives a nice flavour and aroma to the adai. I personally liked the combination of Oats Adai with Jaggery because I add lots of vegetables in adai itself making it much more healthier and hence we don’t need more vegetable in the form of aviyal also. Lets see the recipe now…

Method:
- Take dals in a vessel and rinse in water for twice and soak in water for 30 minutes. Finely chop the vegetables and onions and keep it aside.
- Add oats to the mixer. Grind the oats to a nice powder. Keep the oats powder aside in a separate bowl.
- Now we are going to grind the dals. We don’t want the fine paste of the dals. Therefore we are going to grind the dals in two batches. Drain the water from dals and add half quantity to the mixer along with salt and red chillies and grind it till the red chillies are nicely ground and combined with the dals. Take this in a mixing bowl.
- Add rest of dals and give a pulse and grind it coarsely. Take the ground dal to mixing bowl along with oats powder. Add water little by little to mix everything to a nice batter. Now our adai batter is ready.
- Now lets saute the vegetables. Heat a teaspoon of oil and add the onions along with salt and saute it till it turns transparent. Then add chopped vegetables and saute it with a pinch of salt for 2 minutes. We don’t need to cook it too much just stir-fry for a couple of minutes. This sauting will give a nice half-cooked and at the same time crunchy base to the vegetable. Keep this aside for making adai
- Heat a tawa and grease it with oil. Add one whole add ladle of adai batter to the tawa and spread it nice and thin adai. Sprinkle the saute vegetable on top of the spread adai and gently pat it using a spatula and then brush little oil to the adai and keep in medium flame to cook on the bottom site. Gently turn it to other side to cook till both the sides are cooked and the adai is soft and crispy. Repeat the step for rest of batter
- Yummy and healthy Vegetable Oats Adai is now ready to serve. Serve with jaggery or aviyal and enjoy!
