Yard Beans Masala is one of the delicious accompaniment for any Indian flat bread. We always look for accompaniments without onion-garlic and this is one such delicious dish without them. Most of the usual dry curries and gravies we can very well make without onion-garlic. Always dry curries are easy to make without onion and garlic and we also get a good quantity.  Especially this Yard beans with potato, it very tasty and also we get a considerable quantity of accompaniment to serve. Serve with Roti or rice and enjoy.

Ingredients:

Yard Beans ½ Kg
Potato 4 Medium cubed
Turmeric Powder ½ teaspoon
Salt To taste
Red Chilli Powder 1 teaspoon
Coriander Powder 1 teaspoon
Garam Masala ½ teaspoon

For Seasoning:

Oil 2 tablespoon
Mustard Seeds 1 teaspoon
Cumin Seeds 1 teaspoon
Curry Leaves Few

Method:

  1. Wash and chop the Yard beans into 1' piece. Add turmeric powder and little salt. Sprinkle little water and steam cook till the beans are 75% cooked. Keep the cooked yard beans aside
  2. Heat oil in a pan. Add mustard seeds and allow to sputter and then add cumin seeds. Add curry leaves and saute for 2 seconds
  3. Then add cubed potatoes and toss it well. Cover and cook in medium flame occasionally tossing, till they are tender
  4. Then add turmeric powder, red chili powder, coriander powder, garam masala and salt and toss well. 
  5. Then add cooked yard beans and mix well. Adjust salt it needed. Sprinkle little water and cover and cook for another 2 minutes
  6. Serve the delicious Yard beans Potato Masala with roti or rice and enjoy your dish!
