Double Decker Vegetable Dosa Recipe

Double Decker Vegetable Dosa , a very yummy dosa variety especially for kids to make them eat healthy vegetables. Double decker, as the name implies there are two dosa one on top of other and in the middle it is filled within delicious vegetable filling.  Our kids always have very some reasons to skip healthy vegetables. My daughter, especially hastes milk and not taking enough dairy. She is not a great fan of cheese too. So I thought of making a filling with lot of different vegetables and finally add some cheese and make a filling in-between 2 dosas and she really love the taste and the presentation. Ingredients:
Conventional Dosa Batter 4 Cups*
Onion 1 
Tomato 1
Green Chilli 2
Potato 1
Carrot  1
Mustard Seeds 1 teaspoon
Grated Cheese ½ cup
Oil ¼ Cup

Method:

  1. We have to use our conventional dosa batter. If the batter is freshly fermented, it may be thicker in consistency so you could add ¼ cup of water to dilute it. The batter is now ready. Next, finely chop the onions, tomatoes and potatoes and keep it ready and also grate the carrot and keep it aside. Lets get started with our filling. Heat oil in a pan and add mustard seeds. When the mustard seeds starts to sputter, add chopped green chillies. Now add the chopped onions and tomatoes along with pinch of salt and saute them till the onions turn transparent and tomatoes become little mushy
  2. Now add the chopped potatoes and grated carrot and stir-fry in medium flame till the vegetables are tender and cooked. Keep the filling aside. Heat a tawa and grease it with little oil. Pour 1.5 to 2 ladle of dosa batter and make thicker dosa. Pour little oil and cook on the bottom side. 
  3. Once the dosa is cooked on the bottom, remove it from pan and place it in a plate. Take 2 tablespoon of the filling and spread it on the top of the dosa. Next, lets cook another dosa and this time cook it both the sides by flipping it off and take it out from tawa
  4. Now, add the grated Again place the filling spread dosa in the pan and keep the flame very low and place the another cooked dosa on top the dosa with the filling covering the filling and cook for another couple of minutes and remove from flame. The slow cooking makes the cheese to melt nicely and we would get a nice filling inside
  5. The delicious Double Decker Vegetable Dosa is now ready to serve with chutney / sambar / sauce or any of your favourite dipping!
