Lauki Thepla Recipe | Doodhi Thepla Recipe | Bottle Gourd Thepla Recipe

Thepla, a famous Gujarati Cuisine Indian Flat Bread, wherein chopped greens or grated vegetables are mixed with whole wheat flour along with yogurt and spices. Thepla are thinner than Paratha and in Paratha we stuff the filling but in thepla, we mix the filling with the flour itself. We can make wide variety of thepla using different vegetables / greens. We can make methi thepla, carrot, beetroot, cabbage, mint, coriander leaves, radish etc. Bottle Gourd Thepla is another variety where we add grated bottle gourd and spices to the whole wheat flour and knead it to a dough and make flat breads out of it. This is often referred to as "Lauki Thepla / Doodhi Thepla". We can make this for breakfast / brunch or for dinner. We have to serve this yummy and healthy lauki thepla with plain curd or any raitha and enjoy its dainty taste!

Ingredients:
Whole Wheat Flour 2 Cups* + 2 tablespoon
Grated Bottle Gourd 1 Cup**
Green Chilli 2
Ajwain  / Carom Seeds / Omam 1 teaspoon
Red Chilli ½ teaspoon
Cumin Powder(Optional) ¼ teaspoon
Yogurt 1 tablespoon
Salt To Taste
Chopped Coriander Leaves 1 tablespoon
Butter / Oil 1 tablespoon

Method:

  1. Wash and peel the bottle gourd and grate it and keep it aside. We don't need to squeeze out the water as we need the water for kneading the dough. In a mixing bowl, add wheat flour followed by red chilli powder, cumin powder, ajwain and salt and mix well
  2. Now, add the grated bottle gourd to the mixing bowl and knead well to make a soft dough. We don't need to add more water as the water in the bottle gourd is enough to knead it to a dough. 
  3. Finally add yogurt and chopped coriander leaves and knead it to a smooth dough. Now our dough is ready for making thepla. We don't need to keep it aside as the water in the bottle gourd make the dough more sticky if we leave it aside. So lets start making our thepla. Make equal sized balls out of the thepla dough and take each dough, dust it with flour. Roll the thepla dough ball to a flat bread slightly thicker than chapati but thinner than paratha. Repeat this step for the rest of the dough
  4. Heat a tawa. Make sure the tawa is smoky hot. Place the rolled thepla on the tawa and when you see small bubbles coming up, flip it to other side and cook it. Apply butter / oil on both sides and remove from flame. Repeat the process for the rest of the rolled thepla.
  5. The yummy Lauki / Doodhi / Bottle Gourd Thepla is now ready to be served with plain yogurt or raitha!
