Almond Butter Cookies

Today at last I made decent Almond Butter Cookies after few attempts and they turned out crispy and yummy! The taste is so delicious and for each bite, the crumbled almonds gives more flavour.

Ingredients:

All purpose flour / Maida 1 Cup**
Butter* ¾ Cup
Sugar ¾ Cup
Baking Powder ½ teaspoon
Baking Salt ¼ teaspoon
Almonds ¼ Cup

** 1 Cup = 125 ml
* Butter should be at room temperature

Method:

  1. Preheat the oven at 180 degree C
  2. Take the butter and sugar in a bowl . Using a whisk, mix them both well till you get them fluffy
  3. Dry roast the almonds for 2 minutes and then take it in a mixer and grind it coarsely
  4. Take all purpose flour, baking powder and baking salt in a bowl and sieve them so that the baking powder and baking salt are mixed nicely with the all purpose flour. Add these to the butter-sugar mixture along with the grounded almond  and mix them well to make a dough
  5. Then take small lemon sized balls and press it lightly in the middle and place it in a baking tray lined with foil. Leave at least 1 to 2 inch gap between the each cookie pieces as they well get flattened in the oven. Do not populate the baking try. Bake the cookies in batches. Bake it in the oven for 12-14 minutes. When it is 10 minutes, just stand in front of the oven and see if the edges has changed to light brown colour. For me it took 12 minutes to get to this stage. When you see the cookies gets flattened and colour of the cookies changes to light brown colour, then using oven safe glove, remove the baking tray and allow the tray to cool off. Do not press the cookies at this stage as they will still be soft. Only after cooling off completely, the cookies will becomes harder. Then slowly and gently take the cookies from the baking tray and line it up on the wire plate to cool off completely. 
  6. After 15 minutes, when you touch the cookies, they would have become harder enough. Munch the crunchy and crispy Almond Butter Cookies!!!
