Aloo Broccoli Stir Fry | Aloo Broccoli Curry, a very scrumptious dry curry which goes very well with chapati / roti and also with rice. This tastes delicious with mild flavors of spice powders. Broccoli is rich in dietary fiber, vitamins and more importantly anti-oxidants, which makes this dish super healthy.

Variations that you may want to try 

  • I made this as no onion no garlic version. You can add Onion and Garlic to get good flavor and taste.
  • Instead of Red chili powder, pepper can be added.

Aloo Broccoli Stir Fry | Aloo Broccoli Subzi

Simple and healthy Potato Broccoli stir fry with basic ingredients. It goes very well as an accompaniment with Roti, rice or as a side to any meal.

Ingredients

  • 1 Spear Broccoli
  • 2 nos Potato
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • ¼ teaspoon Asafoetida (Asafetida / Hing)
  • 1 teaspoon Salt adjust to your taste

Tempering

  • 1 tablespoon Oil
  • ½ teaspoon Mustard seeds
  • 1 teaspoon Cumin Seeds

Instructions 

  • Gently remove each florets from the spear of broccoli and keep it ready. Wash, peel and chop the potatoes into medium sized cubes
    1 Spear Broccoli, 2 nos Potato
  • Heat oil in the pan, add mustard seeds. When the mustard seeds starts to sputter, add cumin seeds and saute it for few seconds. Also add Hing and mix well.
    1 tablespoon Oil, ½ teaspoon Mustard seeds, 1 teaspoon Cumin Seeds, ¼ teaspoon Asafoetida (Asafetida / Hing)
  • When the potatoes are half-cooked, add the broccoli florets and stir fry them in medium flame for another 5 minutes. Add Turmeric powder and give a mix
    1 Spear Broccoli, ¼ teaspoon Turmeric Powder
  • Add the chilli powder, salt and keep the flame low and cover the pan with the lid and allow the curry to cook completely atleast for 10 minutes. Now, the broccoli would be cooked and the potatoes would be soft and cooked completely. Remove from flame
    1 teaspoon Red Chili Powder, 1 teaspoon Salt
  • Serve this yummy Aloo Broccoli Stir Fry | Aloo Broccoli Curry with Roti / chapati or with hot steaming rice

Notes

  • I made this as no onion no garlic version. You can add Onion and Garlic to get good flavor and taste.

Method with step by step pictures :

Then add chopped potatoes along with salt and pinch of turmeric and mix well. Stir fry the potatoes in medium flame till they are half-cooked
  • When the potatoes are half-cooked, add the broccoli florets and stir fry them in medium flame for another 5 minutes. Add Turmeric powder and give a mix. Add the chili powder and keep the flame low and cover the pan with the lid and allow the curry to cook completely atleast for 10 minutes. Now, the broccoli would be cooked and the potatoes would be soft and cooked completely. Remove from flame
