Tomato Capsicum Rice is a popular rice variety in many parts of Andhra Pradesh. As we all aware, Andhra cuisine are popular for its spicy taste.  If we are spice lovers, then we will surely enjoy this dish. But adding more spice is optional. We can make it mild and enjoy this rice. Instead of doing plain tomato rice, this would be a different variety and surely a big treat for us. Cooking Tomato Capsicum Rice in Instant Pot:

We can also use Instant pot to make this Tomato Capsicum rice. Switch on the IP in saute mode and follow the process from step 1 to till we add rice. Then add 1.5 cups of water and cancel the saute mode. Close with lid with Vent in "Sealing" position and cook in Manual/pressure cook mode for 4mins. Once done, NPR for 10mins and then force release the pressure.

Tips for making Tomato Capsicum Rice:

  1. Rice variety - We can use any kind of raw rice you regularly use for cooking. I used basmati rice, we can also use Ponni, Sona masoori etc.
  2. Soaking Time - Soak the rice atleast for 20 mins for it to get cooked with less water and in low flame.
  3. Water Ratio - The ratio of rice to water is 1:1. If you use ponni or sona masoori rice, use 1.25 cups of water.
  4. Cooking Time - Cook in the low flame setting in your stove. We need to put whistle and cook in low flame for 20 mins. We will not get any whistle in this 20 mins. If in case you get 1 whistle that is okay.
  5. After the pressure is released, do not stir/mix the rice. Allow the rice to cool for 5-10 mins and then mix.

  1. Capsicum Masala Rice : A very rich in flavour, colourful and very tasty rice variety. The flavour and crunchiness of Capsicum along with the freshly ground spice powder makes this rice even more interesting.
  2. Vangi Bath: or Brinjal Rice is very popular dish in Karnataka. A delectably yummy dish made with brinjal and a special spice powder.
  3. Andhra Pulihora : Pulihora is a popular recipe from Andhra cuisine. It's the Andhra Style Tamarind rice a balanced taste of sourness from tamarind, spices from green and red chili and rich flavor of Sesame oil and sesame seeds. Relish with Papad or Potato chips or any Potato Roast!

Ingredients

  • 3 tablespoon Butter or Ghee / Oil
  • 1 nos Bay Leaf
  • 1 inch Cinnamon Stick
  • 2 nos Cloves
  • 1 tablespoon Cumin Seeds
  • 3 nos Green Chili Slit
  • 1 teaspoon Ginger finely chopped
  • 1 nos Onion finely chopped
  • 3 nos Tomato cubed
  • ¼ teaspoon Turmeric Powder
  • ¼ cup Green Peas
  • 1 nos Potato peeled, cubed
  • 1 nos Green Capsicum cubed
  • 1 cup Basmati Rice 1 Cup - 250ml
  • 1 tablespoon Coriander Leaves For Garnishing
  • 1 cup Water
  • 1½ teaspoon Salt adjust to your taste

Instructions 

  • Rinse the basmati rice in water and soak it in water for 20 mins. Chop the onions, tomatoes, capsicum and green chillies finely and keep it aside. Wash and peel the potato and chop it into cubes.
    1 cup Basmati Rice
  • Heat a pan and add butter. When the butter is hot, add bay leaf, cinnamon stick, cardamom, cloves along with cumin seeds.
    3 tablespoon Butter, 1 nos Bay Leaf, 1 inch Cinnamon Stick, 2 nos Cloves, 1 tablespoon Cumin Seeds
  • Next add slit green chillies and fry for a minute. Then, add the chopped ginger and fry for a second.
    3 nos Green Chili, 1 teaspoon Ginger
  • Now, add chopped onion along with a pinch of salt and saute it till they turn translucent.

  • Then add chopped tomatoes to the pressure cooker along with turmeric powder. Give a good mix.
    3 nos Tomato, ¼ teaspoon Turmeric Powder
  • To the pressure cooker, then add green peas, cubed potato and mix well. When the tomatoes are half-cooked, add chopped capsicum and give it a good stir.
    ¼ cup Green Peas, 1 nos Potato, 1 nos Green Capsicum
  • Drain the water from the basmati rice and add it to the pan. Gently stir the rice for 1 minute in high flame.
    1 cup Basmati Rice
  • Add chopped coriander leaves to the pan.
    1 tablespoon Coriander Leaves
  • Finally add 1 cup of water and give a mix. Add 1.5 teaspoon salt and mix once.
    1 cup Water, 1½ teaspoon Salt
  • Cover the pressure cooker with a lid and a whistle. Cook in low flame for 20 mins.
  • Once the pressure is fully released, open the pressure cooker and Tomato Capsicum rice is now ready! Allow it to cool for 5-10 mins before you give a mix.
  • The delicious Andhra Tomato Capsicum Rice is now ready to serve with any raitha!
