Puliohora is an Andhra Style Tamarind rice. A very popular and commonly made rice variety in Andhra Cuisine. Also in temples the Pulihora is served as Prasad. It is slightly different from the Puliyodarai we make in Tamilnadu. The flavor of  green chili along with ginger makes a distinct variation from our style of Puliyodarai. This Pulihora is very easy and quick to make. We can not only prepare this for festivals but on regular days for our lunch box.  This Pulihora is also called as chintapandu Pulihora.

There are slight variations between Andhra Pulihora, Tamilnadu Puliyodarai and Karnataka Puliyogare. In Tamilnadu, along with tempering, we prepare fresh spice powder which gives a delicious taste and thickness to the gravy. Also in Karnataka Puliyogare we prepare spice powder and it has one distinct ingredient which is coconut. Though each tamarind rice has slight variations, all 3 varieties are easy and quick to prepare.

Tips for making Andhra Pulihora:

  1. Cook the rice with ½ cup less water than our regular rice cooking. This ensures the rice is fluffy and non sticky.
  2. Along with sesame seeds, we can roast peanuts and grind it for enhanced nutty flavor.
  3. Green Chili and ginger are the main flavor. We can even exclude asafoetida as ginger will over power hing.
  4. Adding turmeric, sesame oil to cooked rice makes the pulihora tastes more delicious.
  5. Use Sesame oil for authentic taste of Pulihora.

Pulihora is a popular recipe from Andhra cuisine. It's the Andhra Style Tamarind rice a balanced taste of sourness from tamarind, spices from green and red chili and rich flavor of Sesame oil and sesame seeds. Relish with Papad or Potato chips or any Potato Roast!

Ingredients

  • 3 Cups Cooked Rice 1 Cup - 250ml
  • 1 Lemon Size Tamarind
  • ¼ teaspoon Turmeric Powder
  • Few Curry Leaves
  • 1.5 teaspoon Salt Adjust As needed
  • 2 teaspoon Sesame Seeds
  • 2 teaspoon Sesame Oil

Tempering

  • 2 tablespoon Sesame Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Split Urad Dal
  • 1 tablespoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 1 tablespoon Peanuts
  • 1 inch Ginger Chopped
  • 3 Green Chili
  • 3 Red Chili
  • Few Curry leaves

Instructions 

Soaking Tamarind

  • Soak tamarind in hot water for 10 mins. After 10 mins, squeeze the tamarind and extract the juice. Set the tamarind juice aside.

Preparing Cooked Rice

  • Take the cooked rice in a broad vessel and spread it gently. Add turmeric, ½ teaspoon salt and few curry leaves to the cooked rice.
  • Mix gently and set aside.

Preparing Sesame Seeds Powder

  • Dry roast sesame seeds till its light brown. Allow the roasted sesame seeds to cool completely.
  • Take the roasted sesame seeds in a mixer jar.
  • Grind it to smooth powder. Do not grind continuously for a longer time as it will start releasing oil.

Tempering

  • Heat oil in a pan. Add mustard seeds and cumin seeds. Allow it to sputter. Then add split urad dal, chana dal and peanuts. Fry till dal turns light brown.
  • Next, add slit green chili, broken red chili, ginger and curry leaves. Give a good mix.
  • Now, add the tamarind extract to the pan. Also add turmeric powder, salt and asafoetida to the tamrind juice. Give a good stir.
  • Allow the tamarind juice to boil for 10 mins to get rid off the raw smell of the tamarind and to become little thick in consistency.
  • After 10 mins, switch off the flame. Now our Pulihora mix ready!

Finishing Pulihora

  • Add the sesame seeds powder to the cooked rice. Give a good mix.
  • Now, add the pulihora mix to the rice.
  • Gently mix the pulihora mix with the rice.

Serving

  • Delicious Andhra Style Tamarind rice (Andhra Pulihora) is now ready to serve! Relish with Potato chips or Potato roast!
