Bottlegourd Kurma is a creamy gravy made using coconut, poppy seeds, cashews and few other masala ingredients. In this recipe we are making the Kurma in the pressure cooker to save the effort and time. Bottlegourd Kurma (Sorakkai Kurma) is a best and healthy accompaniment for any Indian Bread like Roti, Chapati etc. Try this simple and tasty kurma and share your experience!

Bottlegourd Kurma is a creamy curry made using cashews, coconut, poppy seeds and few other masala ingredients. The Bottlegourd taste awesome when cooked as kurma, which goes very welll with Roti. In this recipe we are making it in pressure cooker to reduce the effort and time.

Ingredients

  • 1 nos Bottle Gourd (or 2 cups of chopped Bottlegourd)
  • 2 nos Onion finely chopped
  • 1 nos Tomato chopped
  • 1½ teaspoon Salt adjust to your taste
  • ½ teaspoon Red Chili Powder
  • ¼ teaspoon Turmeric Powder
  • 2 tablespoon Coriander Leaves chopped

For Grinding

  • 4 tablespoon Grated Coconut
  • 2 teaspoon Poppy Seeds
  • 6 nos Cashews
  • ½ teaspoon Fennel Seeds
  • 2 nos Green chili
  • 1 inch Ginger
  • 2 nos Garlic cloves
  • 4 nos Cloves
  • 2 nos Cardamom
  • 8 nos Peppercorns
  • ½ tablespoon Roasted Gram Dal (Pottukadalai / Dhaliya)

For Tempering

  • 4 teaspoon Oil or Butter
  • 1 teaspoon Cumin Seeds

Instructions 

Preparation

  • Wash, peel and chop the bottlegourd into small cubes and set it aside
  • Soak the poppy seeds and cashews in hot water and set it aside for 10 minutes

Making of the Masala

  • After 10 minutes, Take rest of the grinding ingredients (given under "For Grinding") along with soaked and drained poppy seeds and cashews and grind it to a fine paste

Making of the Kurma

  • Heat a cooker, add oil / butter. Add cumin seeds and allow it to sputter. Add chopped onion and saute till they are transparent
  • Add chopped tomato and saute till they are mushy.
  • Now add the ground masala and mix well
  • Add 1 cup water and stir well. Add turmeric powder, red chilli powder and salt and stir well. 
  • Now add chopped bottlegourd along with 1 Cup water and close the cooker with lid and add the weight.
  • Pressure cook allowing for 3-4 whistles. After the pressure is fully released, garnish the kurma with coriander leaves 
  • Serve the delicious Bottlegourd Kurma with Indian Bread like Roti, chapati etc

Method to make the Sorakkai Kurma with step by step pictures :
