Soothing Rice for Curd!

Curd rice is one of the healthy and favorite food for most of the kids and adults in Tamil nadu and South India. Especially during hot summer, a bowl of curd rice along with Mavadu or Lemon Pickle is a heavenly treat for our taste buds!

Curd Rice is a staple food in Tamil Nadu and in South India, especially in Brahmin familes. The meal won’t end without the Thayir Sadam in the brahmin families. Curd rice is very healthy, especially during hot summer. Pickle is usually served alongside  Curd Rice.  Among the other pickles, Maavadu is the best accompaniment for  this yummy rice.

Toppings in the Thayir Sadam

Tamil Brahmins usually do a simple tadka (Tempering) and mix with curd rice. However there are multiple other toppings are also usually added to enhance the taste of the Curd Rice. Some of the toppings are Pomegranate, Green Grapes, finely chopped green mango, grated carrots, few finely chopped green chilies, ginger, coriander leaves, etc.,

Tips to make Curd Rice

  • We can make the curd rice using the normal white rice. But if you are making a batch of curd rice for parties, get togethers or travels, we recommend to use slightly mushy rice. Add slightly more water and additional couple whistles while cooking the rice to get the mushy rice.
  • I prefer to use the fresh batch of rice to make curd rice. Left over rice are still perfect for making curd rice, but to taste better use the fresh batch of rice
  • Use fresh curd as much as possible.
  • Try not to add cold curd on the hot rice. Let the rice cool a bit and then add the curd.
  • For packing curd rice for travel / or for use after 4-6 hours, use more milk and less curd to prevent curd rice becoming sour. I would recommend  to add milk fully and add only 1 tablespoon of curd.

Homemade Curd is a rich probiotic and hence it is very good for our stomach. Also curd has lots of proteins and nutrients that can control high blood pressure. A bowl of fresh homemade Curd is one of the healthiest and simple food. In addition to making rice with curd, we can also chop frits like strawberry, blue berry, nuts and banana and serve the fruit flavored curd as a snack to Kids. Also we can make fresh fruit smoothies out of the curd and it would be a healthy drink for kids and adults.

Ingredients

  • 1 Cup Cooked Rice
  • ¼ Cup Milk Boiled & Cooled
  • 1 Cup Curd (Plain Yogurt)
  • ½ tsp Salt Adjust As Needed

For Tempering

  • 1 tsp Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Split Urad Dal (Optional)
  • 2 Green Chili chopped
  • Few Curry Leaves
  • 1 tsp Ginger chopped
  • a Pinch Asafoetida (Asafetida / Hing)

Instructions 

Let's start with Tempering

  • Pour the oil in the pan and add the mustard seeds, once the mustard seeds begins to sputter add the spilt urid daland fry till it becomes golden brown color.
  • Now add hing , chopped ginger and green chilli and fry for a while
  • To this add chopped curry leaves and fry for sometime. Remove the pan from the flame.

Let's start making the Curd Rice

  • Now add cooked rice and pour the milk and curd and mix the rice thoroughly.
  • Add salt according to your taste and give a good mix
  • Now the tasty Curd rice is ready to serve.

Notes

  1. For packing curd rice for travel, use more milk and less curd to prevent curd rice becoming sour. I would recommend  to add milk fully and add only 1 tablespoon of curd. 
  2. If we add milk and very little curd to hot rice the rice will not become much sour later when we eat.

Hi, If we add curd fully, the rice would taste more sour. Thats the reason we add more milk and less curd.
