Bitter gourd/melon is one of the best plant foods that helps improve diabetic and toxemia conditions. Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana.

Such a heathly plant food is ignored by many of us because of its bitter taste. Especially, children ignore this because of its bitterness. Fortunately, my daughters love bitter gourd. For the people who has aversion to bittergourd, these Bittergourd Cutlet (Karela Tikkis) would be a best way to in take bittergourd. So now lets see how to make this Bittergourd Cutlet (Karela Tikkis)...

Ingredients:
Bittergourd 2
Grated Carrot ½ Cup
Boiled and Peeled Potatoes 2
Boiled Green Peas 2 tablespoon
Whole Wheat Bread Slice 2
Salt To taste
Coriander Powder 1 teaspoon
Red Chilli Powder ¼ teaspoon
Chopped Coriander Leaves 1 tablespoon
Oil 2 tablespoon

Method:

  1. Wash and slit the bittergourd into halves and remove the seeds from it. Then grate the bittergourd and take it in a bowl. 
  2. Sprinkle salt to the grated bitter gourd and mix well and keep it aside for 5 minutes. Meanwhile take the grated carrot and mashed potatoes in a mixing bowl. 
  3. After 5 minutes, squeeze out the water from grated bitter gourd and add that to the mixing bowl. To the bowl add green peas. Then add coriander powder, red chilli powder, salt and mix well
  4. Next, add chopped coriander leaves. Crumble the whole wheat bread slices and mix everything well. 
  5. Knead everything well. Make balls out of the cutlet mixture. 
  6. Heat a non-stick tawa, slightly flatten the balls and place it in the tawa and sprinkle oil. Fry the tikkis in medium flame. Gently flip on the other side and fry the tikkis by adding some more oil. Gently remove the fried tikkis from the tawa and add the next batch till you finish off the whole cutlet mixture
  7. Serve the yummy tikkis with sauce and enjoy the tikkis!!!
