Kuttu Ka Halwa | Buckwheat Flour Halwa Recipe

Kuttu is BuckWheat Flour in english. Buckwheat is gluten free flour and hence considered as an ideal food especially during fasting days. In Northern Part of India, especially during Navratri or other festive occasions, women used to keep Vrat and during Vrat only few ingredients they can consume and out of which Buckwheat is one healthy flour and they can make many delicious dishes using Buckwheat flour. It does not fall in grain category and hence is deemed fit for consumption during fast or vrat. It can also be consumed by people having gluten allergies. Buckwheat is a very low calorie food. It is a rich source of of protein, dietary fiber,  vitamins and several dietary minerals. This halwa recipe is same as besan ka halwa or atta ka halwa.  This can be prepared very quickly and but stirring continuously is very important to avoid lumps. This North Indian sweet Kuttu Ka Halwa (Buckwheat Halwa) is perfect for any religious fasting like navratri, ekadashi or shivratri.

Ingredients:
BuckWheat Flour / Kuttu ka Atta ½ Cup*
Amaranth Flour / Rajgiri ka Atta 1.5 Tablespoon
Sugar ½ cup
Ghee 4 Tablespoon
Water 1.5 Cups
Chopped or Sliced Almonds 2 Tablespoon

* 1 Cup = 250ml



Method:

  1. Bring 1.5 Cups of water to boil and keep it aside
  2. Heat 2 tablespoon of ghee and add the buckwheat and amaranth flour and roast the flours in ghee till they become golden brown. 
  3. Then, add the boiling water and keep stirring continuously so that the flours gets cooked in water without having lumps
  4. When all the water is fully absorbed, add sugar and stir continuously
  5. Adding sugar again dilutes the halwa. No need to worry, keep stirring till everything is completely incorporated and the halwa becomes thick and starts rolling without sticking to sides of pan
  6. Add rest of the ghee and mix thoroughly
  7. Finally garnish with chopped Almonds / cashews 
  8. The delicious Kuttu Ka Halwa now ready to serve!
