One of my friend made this yummy no onion no garlic Mint Coriander Leaves Pulao for a pooja. It was so yummy. Whenever, we do pulao, we usually add onion and garlic. But this mint coriander leaves pulao tasted so good without onion and garlic. With mild spices and rich aroma of mint and coriander leaves gives a good flavour to the pulao. When I make plain mint rice, my kids are not that much interested. But they enjoyed this Mint-coriander Pulao so much. Relish with your favourite Raitha and curry!!!

Mint Coriander Pulao | No Onion No Garlic Mint Pulao

Mint Coriander Pulao is a Rice Pulao made using freshly made Mint & Coriander paste. It's no onion no garlic recipe, which is one of the main difference compared to conventional pulao. Very simple Pulao with just mint, coriander paste and few other spices make this flavorful and colorful pulao very appetizing and loved by family and friends.

Ingredients
- 1 cup Basmati Rice 1 cup - 250 ml)
- ½ cup Mint Leaves fresh
- ½ cup Coriander Leaves fresh
- 2 nos Green Chili
- 1 inch Ginger finely chopped
- 1 teaspoon Salt adjust to your taste
- 2¼ cups Water
For Tempering
- 1 tablespoon Oil
- 1 teaspoon Cumin Seeds
- 2 pcs Cinnamon Stick
Instructions
1. Soak the Rice
- Wash and soak the basmati rice in water for 15 minutes.
2. Make the Mint & Coriander Paste
- Heat a teaspoon of oil in a pan, and add chopped ginger and saute it for couple of minutes
- Then wash and add the mint and coriander leaves to the pan along with green chillies and saute them for 2-3 minutes. Please ensure that the green color is not changing. If the color is changing, then stop the heat immediately.
- Take all these fried ginger, chilli and mint and coriander leaves to the mixer and grind it to paste and set this aside
3. Start with Tempering
- Heat the remaining oil in a pan and add cumin seeds. When the cumin seeds starts to sputter, add cinnamon stick and saute it couple of seconds.
- Then add the ground mint paste and saute it for couple of minutes.
4. Let's start making the Pulao
- Next drain the water from the basmati rice and add the rice to the pan. Saute the basmati rice along with mint paste and spice for a minute.
- Add 2 cups of water to the pan along with the salt and mix well. Keep the flame high and bring the water to boil.
- When the water is fully absorbed, keep the flame in low and close the pan with a lid and cook for another 20 minutes in very low flame till the rice is nicely cooked and becomes fluffy and then switch off the flame
- Serve the delicious Mint Coriander Leaves Pulao with your favourite raitha!!!
Notes
- This is no onion no garlic recipe. But if you want to make it more flavorful then you can sauté onion and garlic immediately after tempering
- I made this very light without adding any other vegetables. But you can add Beans, Carrot and other vegetables of your choice. Also you can add cashews/nuts of your choice.
- Ensure that you bring the water to boil in high flame. Once the water is absorbed, keep the flame in low and close the pan with a lid and cook for another 20 minutes in very low flame
