Mixed Vegetable Paratha Recipe

Paratha's are always in a healthier side keeping in mind we use less butter or oil. We can make many different types of healthier parathas. In previous week, I have shared with you how to make healthy Soya Mince Paratha. This week, its mixed vegetable paratha. Kids always have some reasons to avoid some vegetables which are healthier. My daughter always come up with reason to avoid capsicum and cabbage. She loves to have aloo paratha. To make her eat all the vegetables, I usually make mixed vegetables paratha so that she cannot neglect any vegetables. 
Mixed vegetable paratha is a very healthy Indian Bread variety as we are including all healthy vegetables. Serve this yummy paratha with Plain curd or any raitha and enjoy the dish!

Ingredients:

Whole Wheat Flour 2 Cups* + 2tabespoon
Mixed Vegetables * 1 Cup
Cumin Seeds 1 teaspoon
Onion 1
Garlic Clove 1
Chopped Coriander Leaves 1  tablespoon
Garam Masala 1 teaspoon
Salt To Taste

* 1 Cup = 250ml
** I have used potato, carrot, beans, capsicum and cabbage. Vegetables are our choice, but make sure to chop them very finely

Method:
  1. Take wheat flour in a mixing bowl and add water little by little and knead it to a soft but stiff dough, cover the dough with a damp cloth and set it aside for 15 minutes
  2. Wash the vegetables and finely chop them. Steam cook the vegetables other than onion and when the vegetables are cooked, mash them well and keep it aside. Heat oil in a pan and add cumin seeds.
  3. When the cumin seeds starts to sputter, add the finely chopped garlic and onions along with pinch of salt and saute the onions till they are transparent. Then add the mashed vegetables along with garam masala and salt and mix them well and stir- fry them in low flame for a couple of minutes so that the moisture gets evaporated from the vegetable masala. Now our vegetablee masala filling is ready
  4. Make equal sized balls out of the paratha dough and also 8 equal sized balls out of the filling. Using a rolling pin, roll a dough ball to a small circle. We have to roll it in such a way that all the sides are to be knead well leaving a small mountain in the middle. This is to make sure, the filling is nicely fold inside the paratha. Keep a ball of filling in the middle of the rolled dough. Carefully close the dough sealing all the corners of the dough and make sure filling is properly sealed. Keep repeating the step 5 and 6 for the rest of dough and filling. Now lets roll the stuffed dough balls.
  5. Take each stuffed dough ball and roll it by dusting flour on both the sides. Roll it gently and slowly to make sure the stuffing doesn't comes out. Also using a fork prick the edges so that bubbles are not forming while rolling so that to make sure stuffing doesn't come out. Heat a tawa. The tawa should be smoky hot. Place the rolled paratha in the tawa. Cook the paratha till you start getting bubbles.
  6. Gently flip it on the other side and cook the paratha. Apply butter on the cooked side. Again flip the paratha to the other side and apply butter and cook the paratha till both the sides turns nicely golden brown color.Remove paratha from flame. Repeat the same for rest of the parathas
  7. Healthy and yummy Mixed Vegetable Paratha is now ready to serve with Plain curd or any Raitha.
