Pattanam Pakoda, also referred as "Medhu Pakoda" is one of the popular street side snacks in Tamil Nadu especially in Chennai Tea shops. Not only in tea shops, even in most of the restaurants, this medhu pakoda will surely be on their evening snacks menu. Unlike the conventional pakoda which is crispy and crunchy, this medhu pakoda is crispy outside by inside will soft and delicious. Adding Roasted gram flour is the key to get perfect texture of Medhu Pakoda. The crunchiness of the onions along with the spicy chili, curry leaves and other spices makes this Pakoda so delectable. Relish with hot tea/coffee!

Tips for making perfect Pattanam Pakoda:

  • Roasted gram dal is easily available in most of our pantry, just grind it to smooth powder to use in this recipe.
  • Thinly slice the onions for this pakoda.
  • Beat the ghee and baking soda nicely so that it can be combined well with flours. This will help to get soft inside in the Pakoda.
  • Add water little by little to combine flours, spices and onions. We need like a dough consistency.
  • Depending upon the quantity of oil we heat for deep frying ,we can roll out our pakoda balls.
  • Make sure the oil is hot enough by dropping a pinch of pakoda mixture, if it raises immediately the oil is hot.
  • After adding 3-4 pakoda's in oil, reduce the flame to low and cook the pakoda till its golden brown. This ensure the inside part of the pakoda is also getting cooked without the outside getting burnt.

Pattanam Pakoda, a very popular street side snack in Chennai and many cities of TamilNadu. Crispy outside, soft inside this pakoda is so tasty and mouth-watering. Serve with hot tea/coffee and enjoy this delicious snack!

Ingredients

  • ⅓ Cup Rice Flour 1 Cup - 250ml
  • ⅓ Cup Gram Flour (Besan / Chickpea Flour)
  • ⅓ Cup Roasted Gram Dal (Pottukadalai / Dhaliya)
  • 1 tablespoon Ghee
  • 1 Pinch Baking Soda
  • 1 nos Onion Thinly Sliced
  • 1 Green Chili Finely Chopped
  • 1 inch Ginger Finely Chopped
  • Few Curry leaves
  • 1 tablespoon Coriander Leaves
  • ½ teaspoon Red Chili Powder
  • 1 teaspoon Salt Adjust As Needed
  • 2 Cups Oil For Deep Frying

Instructions 

Grinding Roasted Gram

  • Take Roasted gram in a mixer jar and grind it to smooth powder

Preparing Pakoda Mixture

  • In a mixing bowl, add ghee and baking soda. Beat well with a whisk till the ghee is combined well with the baking soda
  • Add rice flour, besan, ground roasted gram flour to the ghee mixture. Using finger tips mix the flours nicely with the ghee+baking soda mixture
  • Now, add salt, red chili powder, chopped ginger, green chili, curry leaves and coriander leaves.
  • Add sliced onions and mix everything well. Add water little by little and start mixing the flours
  • The flours gets nicely mixed with onions and other spices and becomes like a roti dough.
  • Make small lemon size balls out of the pakoda mixture. Pakoda dumplings are ready to get deep fried

Deep Frying Process

  • Heat oil in a heavy bottomed pan. When the oil is hot enough, gently drop 3-4 pakoda balls in the oil
  • Deep fry the pakoda's in low-medium flame till the pakodas' become golden brown and crispy.
  • Repeat the process and fry the rest of the pakodas'

Serving Time

  • Serve the crispy Pattanam Pakoda with hot tea/coffee and enjoy this delicious snack!
