Ragi Halwa Recipe | Kezhvaragu Halwa | Finger Millet Halwa

Ragi (Finger millet) has lot of nutritional benefits. We can make many variety of dishes with ragi. This Ragi Halwa (Kezhvaragu Halwa) is very simple to make and it is a perfect and healthy dessert.  Always jaggery and coconut goes well with Ragi. For ragi laddoo, we use jaggery and ragi and for ragi puttu, we use ragi, sugar and coconut. So I love this combination.  A yummy way to consume Ragi and hope you will enjoy too.

Ingredients:
Ragi Flour 1 Cup*
Grated Jaggery 1 Cup
Cardamom Powder ½ teaspoon
Ghee ½ Cup
Grated Coconut ½ Cup
Cashews few
Raisins few

* 1 Cup = 250ml

Method:

  1. Heat a pan and dry roast the ragi flour till you get a nice aroma. Keep the roasted ragi flour aside
  2. In the same pan, add a teaspoon of ghee and roast the raisins and cashews and take that aside
  3. In a sauce pan, add grated jaggery along with a cup of water and allow the jaggery to completely dissolve. When the jaggery is fully dissolved, remove from flame
  4. Heat the pan and strain the jaggery juice and bring it to boil. Add the roasted ragi flour little by little and keep stirring till it gets nicely combined with the jaggery juice
  5. Now, add 2 tablespoon of ghee and keep stirring till it is nicely combined with ragi and jaggery. Repeat this till all the ghee is used up and the halwa has got a nice glossy texture. 
  6. Add grated coconut and cardamom and combine well
  7. Finally garnish with roasted cashews and raisins and combine well
  8. Serve the delicious and healthy Ragi Halwa is now ready to serve!
