Uthappam is very simple to make and it does not need any great expertise. All we need to do is to make the the toppings on uthappam. We can have many different varieties of toppings like onion, tomato, capsicum, paneer and much more. It depends on how creative we are and what your family likes. In the below recipe i made Uthappam using 6 different toppings which is very delicious as well as very presentable. We can plan for a great uthappam toppings to surprise our family and guests.

Many of generally use to do onion uthappam a lot. But i would encourage you to try different toppings. Kids love Panneer topping. Elders love the Podi topping. Capsicum/Carrot will also taste very yummy. I usually make a batter once a week, and use the batter for first two days to make idly's and third day for Dosa. Instead of Dosa, i also make Uthappam, which is loved by everyone in the family. You can also try this approach and give a pleasant surprise to your family
Serve the Uthappam with Restaurant Style Sambar and Coconut Chutney !

Uthappam is a thick dosa with topping of our choice. This would be soft and spongy unlike the thin dosa that we usually make. There can be 100s of varieties of Utappam can be made depending on the topping that we like. In restaurants like Saravana Bhavan 5 taste Uthappam / Mini Uthappam are quite popular. We cna make this easily in the home. We just need the dosa batter and the toppings of our choice to make Variety Uthappam

Ingredients

  • 2 cup Idli Batter Idli Batter will be used to make Dosa
  • ¼ cup Ghee / Cooking Oil

Uthappam Toppings

  • 5 nos Shallots / Baby Onions chopped (or) chopped big onion
  • ½ nos Carrot grated
  • ½ nos Green Capsicum chopped
  • ¼ cup Coriander Leaves chopped
  • 2 tablespoon Grated Cheese
  • 1 tablespoon Idli Milagai Podi
  • 1 nos Tomato chopped
  • 2 nos Green Chili

Instructions 

Preparation

  • Finely chop the onion, tomato, red capsicum, green capsicum and coriander leaves and keep each one separately in a plate. 
  •  Very finely chop the green chillies. 
  • Peel the carrot skin and grate it
  • Grate the Cheese. If you are using grated cheese then you can skip it
  • Take the dosa batter and keep it ready. Do not dilute the dosa batter. We need a thick batter to make uthappam. For normal dosa (thin plain dosa), we need diluted batter then only we can have thin dosa, but for uthappam we need thick batter as we don’t need to spread the batter. 

Making of the Uthappam

  • Heat a tawa and grease it with little oil. Add a small ladle of batter and allow it to settle on its own. Do not spread the batter. 
  • Pour little ghee or oil on top of the Dosa. When small bubbles starts to come, add the toppings. For Onion Uthappam, sprinkle the chopped shallots / onion and green chillies on top of the batter. Keep the flame in medium allow the uthappam to cook.  
  • Gently turn the uthappam to other side and drizzle little ghee or oil and cook the uthappam on other side in low flame
  • Remove the onion uthappam from flame.
  • Repeat the same step for other toppings like tomato, capsicum, panner, carrot and podi uthappam
  • Yummy Variety Uthappams are ready to serve with Tiffin Sambar and variety chutneys

Notes

  1. Use Thick Dosa Batter for making Uthappam. Also we use well fermented batter. Usually I use the remaining dosa batter after finishing 2 or 3 batches of idli/ dosa for making Uthappam. 
  2. Don't spread the dosa. After pouring the batter let it settle on its own 
  3. Choose the topping of your choice in making Uthappam. For example you can use colored capsicum, instead of cheese you can use paneer, etc., 
  4. Use Low to Medium flame for making Uthappam, which enables the uniform cooking. 
  5. Instead of oil, you can also use ghee for extra flavor and taste

Method to make Mini Uttapam:
