What kind of Rice to be used for Khichdi?

Conventionally short grain rice like sona masoori or  ponni raw rice is used. But we can use long grain rice like basmati rice also. Even we can use millets in place of rice to make Khichdi

What dals are suitable fo Khichdi?

Moong dal, Toor dal, Green Moong are widely used dals for Khichdi.

Tips for Dal Khichdi:

  1. Conventionally we use equal part of rice and lentils for khichdi. But we can make the ratio 2:1 (2 rice : 1 dal)
  2. Soaking Rice and Dal for 20 mins helps to get nicely and mushy khichdi in pressure cooker
  3. We can combine multiple dals like toor dal, masoor dal or green moong along with yellow split moong dal
  4. We can make Khichdi without onions also. We can add chopped veggies like carrot, beans, potato to make the khichdi more nutritious.
  5. Consistency of Khichdi is our preference. I like mushy texture so added 3.5 cups of water ½cup moong+½cup rice. If you want like porridge consistency, you can increase the water consistency by 1 cup. Or if you want more dry and crumbly texture try adding less water
  6. Ghee gives the ultimate taste to khichdi. So always use ghee. If you are diet conscious use coconut oil
  7. We can add a tempering of cumin, curry leaves, chopped garlic to the prepared khichdi for added variation
  8. Serve Khichdi hot with a topping of ghee along with pickle, papad and curd!
