Mooli Paratha Recipe | Radish Paratha Recipe

Another popular paratha variety is Mooli Paratha (Radish Paratha). Mooli paratha is served as a breakfast dish in many parts of Northern India especially in Punjabi Restaurants. Healthy radish with mild spices stuffed in Indian bread served with plain curd or dal is a dainty dish. Most of us hate radish because of its smell. The moment we grate the radish, the whole home has the smell of the radish which many of us doesn't like it. But with added spice and awesome aroma of the coriander leaves, the filling would be more aromatic and it makes the dish overall tasty. Lets see how to make this simple and yummy Mooli paratha!

Ingredients:
Whole Wheat Flour 2 Cups**
Radish 2
Green Chilli 1
Salt To taste
Garam Masala ½ teaspoon
Red Chilli Powder ½ teaspoon
Coriander Powder ½ teaspoon
Chopped Coriander Leaves 1 tablespoon
Ajwain / Carom Seeds ½ teaspoon
Cumin Powder ½ teaspoon
Oil 1 teaspoon
Butter ¼ Cup

Method:

  1. Wash the radish and peel its skin. Grate the radish. Squeeze the radish to get the water out of it. You can see how much water I have got from 2 radishes. We don't need to throw away this water. We need this water to knead the paratha dough. This water gives a nice aroma to the paratha. Some quality of radish doesn't have enough water. We can just sprinkle little salt to the grated radish and keep it aside for 10 minutes and then we can sqeeze out the water from it. Or if you are running out of time and you don't water the radish water because of its smell, then just add the grated radish to the pan and stir-fry in high flame for 2-3 minutes until all the moisture gets evaporated from the grated radish.
  2. In a mixing bowl, add the wheat flour along with salt and oil and mix well. Add the radish water little by little and knead it to a soft dough. Keep this dough aside for 10 minutes covering it with a damp cloth
  3. Meanwhile, add salt, red chilli powder, cumin and coriander powder, ajwain and finely chopped green chillies and coriander leaves and mix well. Make 8 equal portions of the filling
  4. Make 8 equal balls out of the paratha dough. Take one dough ball and roll it using rolling pin. We have to roll it in such a way that all the sides are to be knead well leaving a small mountain in the middle. Take lemon sized ball of the filling and place it in the center mountain of the rolled paratha. Carefully close the dough sealing all the corners of the dough and make sure filling is properly sealed. Keep repeating the step 5 and 6 for the rest of dough and filling. Now lets roll the stuffed dough balls. 
  5. Take each stuffed dough ball and roll it by dusting flour on both the sides. Roll it gently and slowly to make sure the stuffing doesn't comes out. Also using a fork prick the edges so that bubbles are not forming while rolling so that to make sure stuffing doesn't come out. Heat a tawa. The tawa should be smoky hot. Place the rolled paratha in the tawa. Cook the paratha till you start getting bubbles.
  6. Gently flip it on the other side and cook the paratha. Apply butter on the cooked side. Again flip the paratha to the other side and apply butter and cook the paratha till both the sides turns nicely golden brown color.Remove paratha from flame. Repeat the same for rest of the parathas
  7. Serve the tasty Mooli Paratha with plain curd or yogurt or any dal varieties and enjoy the taste!
