Samai Payasam is very similar to our Paal Payasam . Instead of Rice we can use Samai (Little Millet), a Very healthy and alternate variety of Payasam
I have explained about the nutritional benefits of Saamai (Little Millet) in Little millet Kichadi Recipe. Such a nutritional rich millet should be included frequently in our diet. This time, I have used this Saamai to make a very tasty payasam. This payasam is same as our conventional Paal Payasam (Milk+Rice Kheer), but instead of rice, I have used Saamai. The payasam was exceptionally tasty and healthy too. So try this healthy and tasty Saamai Paal Payasam (Little Millet Kheer) and enjoy with your family!!!

Ingredients
- ¼ Cup Little Millet (Samai)
- 2 Cups Milk
- 6-7 Cashews
- 1 tsp Ghee (Clarified butter)
- ¼ Cup Sugar
- ¼ tsp Cardamom Powder
Instructions
- In a pan add the milk and keep it in flame. Keep stirring occasionally till the milk starts to boil. I have used Aavin milk. Wash the saamai and keep it ready
- When the Milk starts to boil, add saamai and mix well. Keep the flame in medium and Stir occasionally. Let the saamai cook and the milk also gets reduced to half of the quantity, The milk when gets reduced has a nice flavour and texture so we don’t need to even add cardamom powder. It will take atleast 20 minutes for the milk to get reduced and the saamai to cook completely. When the saamai is cooked, add sugar and mix well. Keep the kheer in flame for another 5 minutes.
- In another pan, add ghee and fry the cashews till they are golden brown color. Add these roasted cashews to the payasam and mix well. Remove the payasam from flame
- The delicious Saamai Paal Payasam (Little Millet Kheer) is now ready to serve!
Notes
- We can soak few saffron strands in warm milk and add it to get a nice color
- Little millet cooks faster and hence I have added it directly in milk. If you want, we can cook the little millet in water separately and add it to milk later

Healthy millet kheer..looks divine love the simple payasam recipe with just the flavour of milk.
At what stage is sugar added?
Hello mam,
When should the sugar be added to the kheer? Its not mentioned.
Sorry missed to add that step. After the milk has reduced and saamai is cooked we can add sugar and again keep in flame for 5 more minutes and switch off the flame.
healthier option…try adding nattu sakkarai / brown sugar instead of white..it works out
