Ulundhu Kozhukattai is a savory version of the Kozhukattai which we prepare on the auspicious occasion of Vinayakar Chathurti Festival. Some like to have spicer version rather than sweets and this would be a perfect substitute for the usual kozhukkatai with divine taste.

The filling for this Kozhukattai is made using Urad dal and spices. The Urad dal is soaked for 30 minutes, then ground coarsely  along with green chili and salt. This mixture is further steamed and upon cooling the crumbled mixture is tempered and used as a pooranam to make this Uppu Kozhukattai (Savory Modak)

Preparation of Outer Cover for the Kozhukattai

We can make outer cover in 2 ways.  One soaking rice, making batter and cooking it till a dough consistency which is shared in this recipe. I always follow this method and it gave very good results every time.  Another conventional way to make outer cover is to soak the rice for an hour, dry the soaked in a clean cloth and then grind it to smooth powder which is then cooked in hot boiling water till it becomes dough.

Ulundhu Kozhukattai is a savory variety of kozhukattai we make on the auspicious festival day of Ganesha Chaturti. The filling is made with Urad dal along with other spices.

Ingredients

Kozhukattai Outer Cover

  • 1 Cup Kozhukattai Mavu

For Filling

  • ½ Cup Urad Dal
  • 1 Green Chili
  • 1 tablespoon Coconut Chopped or Grated
  • Salt As Needed

For Tempering

  • 2 teaspoon Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Split Urad Dal
  • Few Curry Leaves

Instructions 

Preparing Outer cover

  • Prepare the Kozhukattai mavu (dough) as per the instructions given in the link.

Preparation of Filling

  • Soak the urdhal in water for 30 mins and after that take the urdhal from water.
  • Add green chilli and salt and grid the urdhal in a mixer one or twice
  • Take small dumplings out of the ground dough and make small patties. Add the patties to the greased Idly plates and steam cook it in a pressure cooker for 5mins.
  • Take the cooked urdhal mixture from the pressure cooker and using your hand break the urdal mixture.

Tempering Process

  • Heat oil in a pan. Add mustard seeds and allow it to sputter
  • Once the mustard starts to sputter add split urad dal hing and urdhal mixture and mix it well and keep it aside. 
  • Make equal size urdhal mixture balls and keep it aside. Savory Filling (Uppu Puranam) ready!

Making Uppu Kozhukattai

  • Take some oil in a bowl and take little oil in a hand and then take little amount of kozhukattai dough and using the oil make it like a cup and then in the middle of it add the urdhal pooranam. Close the outer cover and keep it aside
  • Steam cook the urdhal poorna kozhukattai in pressure cooker by placing it in a idli plate for 5 mins
  • The delicious urdhal poorana kozhukattai is ready for neivedhyam as well as for serving

Notes

  1. We are cooking the Urad Dal filling and hence steam the kozhukattai only for 2-3 mins
  2. Instead of Urad dal we can substitute with moong dal or bengal gram dal
  3. Always cover the kozhukattai mavu with damp towel to make sure the dough is not dried up.
