Method:

  1. In a mixing bowl, add varagu raise and moong dal. Wash and soak them in water for 30 minutes
  2. After 30 minutes, drain the water. Add 2 Cups of fresh water and pressure cook for 3-4 whistles.
  3. After the pressure is fully released, mash the millet and dal and set that aside
  4. In a pan, add a teaspoon of ghee. Roast few cashews and raisins and take that aside
  5. In the same pan, add 2 tablespoon of ghee. Add grated jaggery and allow the jaggery to melt in the ghee. We can also add little water to melt the ghee. But melting jaggery in ghee gives a nice flavor.
  6. When the jaggery gets melted, add mashed millet + dal mixture. Stir well so that everything gets incorporated well
  7. Add cardamom powder and mix well. Add milk and stir well. Also add ghee and mix well
  8. Finally garnish with roasted cashews and raisins and switch off the flame.
  9. The delicious Varagu Arisi Sakkarai Pongal (Kudo Millet Sweet Pongal) is ready to serve!
