Vazhakkai Varuval Recipe | Vazhakkai Roast recipe| Raw Banana Fry Recipe | Vazhakkai Fry Recipe is one of the popular poriyal using Vazhakkai.  Like Potato, Raw banana is another yummy vegetable which tastes divine if we stir-fry them. Vazhakki Varuval is one of the traditional poriyal or curry variety in most of the South Indian kitchen. Raw banana cooks very fast and for stir-fry we don't need to use much oil if we use non-stick pan. A hassle free and quick Vazhakkai stir-fry and would be a nice side dish for most of the of the rice varieties and even with all traditional kuzhambu varieties. Vazhakkai Varuval (Raw Banana Fry) is one of the easy to make poriyal where we slice the raw banana (vazhakkai) in to very thin pieces and marinate them in the masala and shallow fry in the medium flame. This tastes awesome and can be made very quickly.

Tips for making Vazhakkai Fry:

  1. Slice the raw banana to slightly thicker slices so that it won't get mushy while getting fried.
  2. Soak the raw banana slices in water till its ready to get marinated. Raw banana get de-colorized if not soaked.
  3. Adjust the spice according to your needs. You can also add a pinch of amchoor powder to get a slight tangy flavor.
  4. Marination helps the raw banana slices to absorb the spices nicely.
  5. Shallow fry the raw banana slices in low flame and flip the slices often to make sure they are fried properly on both the sides without getting burnt.

Vazhakkai Varuval is slightly crisp and spicy fry made using Raw Banana (Vazhakkai). Crispy Raw banana fry is a perfect accompaniment for any South Indian rice varieites or for Sambar/Kuzhambu & Rasam varieties. Learn here how to make this Vazhakkai fry with step by step pictures and instructions!

Ingredients

  • 3 nos. Raw Banana
  • ½ teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • ½ teaspoon Pepper Powder
  • 1 tablespoon Gram Flour (Besan / Chickpea Flour)
  • ¼ teaspoon Asafoetida (Asafetida / Hing)
  • t teaspoon Salt adjust to your taste
  • ¼ cup Oil

For Tempering

  • 2 tablespoon Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Split Urad Dal
  • Few Curry leaves

Instructions 

Preparation

  • Peel the Plantain and slice  it to ¼" slices and soak it in water and keep it aside. Soaking in water prevents de-colorization. 

Marination

  • In a mixing bowl, take turmeric powder, red chili powder, coriander powder, besan and salt.
  • Add water little by little and make it to thick paste.
  • Add the sliced raw banana to the spice paste. Coat each slice nicely with spices. Set aside for 20 mins.

Making Fry

  • Heat oil in a pan. Place the raw banana slices on the oil without overcrowding. I needed, fry in batches.
  • Fry the slices in low flame. After 2 mins, flip and fry the slices on other side. Fry til the slices become golden brown on both the sides. Take these fried slices aside.

Tempering

  • Heat oil in a pan. Add mustard seeds and allow it to sputter. Then add splir urad dal and fry till its light golden. Add few curry leaves, give a mix.
  • Add the fried raw banana slices and give a toss. Swtich off the flame.

Serving

  • Serve the delicious Vazhakkai Fry with any South Indian Main course and enjoy this spicy and crispy fry!

  1. You can  optionally add two table spoon of coconut
