Vegetable Idly

Vegetable Idly is a delicious south indian idly variety. Many of the youngsters and children prefer to eat dosa instead of idly. But you can try this and your children will love to eat idly after this.

Vegetable Idly

Ingredients:

Carrot 1
Potato 1
Tomato 1
Onion 1
Green Chilli 1
Salt To Taste
Oil 2 teaspoon
Mustard Seeds 1 teaspoon
Turmeric Powder a pinch
Idly Flour 4 cups
Garam Masala (optional) 1/2 teaspoon

Method:
  • Finely chop the vegetables and keep it aside
  • Heat oil in a heavy bottomed and add mustard seeds. When the mustard seeds starts to sputter, add the chopped green chillies and vegetables and fry for a while and then add water to cook the vegetables
  • Add turmeric powder and salt and mix well and allow the vegetables to cook completely. Add Garam masala (optional) powder.
  • Pour the idly batter in the idly plates and in the middle of each idly batter, add 1 teaspoon of cooked vegetables and cook it in pressure cooker and serve with milagai podi (gun powder) , chutneys and sambar

I have a small suggestion. If you pour half the ladle of batter into the idli mould and steam it until half cooked, then remove and add the vegetable mixture and cover or top it with more batter and then steam again, you would have yummy vegetable sandwich idlis ready. Please try this variatiion and let me know. Thanks.

Thank you for this idea mami. Inspired by this I tried a variation. Cut all these vegetables (instead of onion i used cabbage)into thin long strips, mix with salt and pepper powder and just add to batter and steam. It gives a nice, crispy feeling and tasted very good.
