Vegetable Masala Toast, a versatile and simple breakfast dish. Mixed vegetables are cooked with Indian spices which are then spread on a bread and toasted in a tawa. This is a very simple and easy to make morning breakfast. Kids love to eat Toast bread as morning breakfast or as their Lunch box dish. Vegetable toast bread with ketchup is a perfect combo! A complete healthy meal for a nice morning!

Tips for making Vegetable Masala Toast Recipe:

  1. Choice of bread: We can use brown bread or grain bread or white bread whichever we use regular at home.
  2. Choice of Vegetables: The use of vegetable are our choice. Usually potato binds nicely with all the veggies used.
  3. Choice of Spread : I have used ketchup as a spread. If you like, you can grind mint, coriander leaves along with green chili, garlic and use that green chutney as paste.
  4. Choice of Topping: You can add grated cheese as topping along with Italian seasoning.

Vegetable Toast is a very easy and versatile recipe as you are free to add any vegetables of your choice. There can be many variations which can be made based on your liking - right from the choice of the spread, vegetables to be added, addition of cheese, spice level, etc., This is the basic version of toast which can be customized based on your liking.

Ingredients

  • 10 nos Bread Slices

Vegetables

  • 1 nos Onion small size (if big, use ½ onion)
  • 3 nos Potato medium size
  • 1 nos Tomato small size (if big, use ½ tomato)
  • 1 nos Green Capsicum small size (if big, use ½ capsicum)
  • 2 tablespoon Ginger finely chopped
  • 1 nos Carrot small size (if big, use ½ carrot)
  • 2 tablespoon Coriander Leaves finely chopped

Masalas

  • 1 teaspoon Coriander Powder
  • 1 teaspoon Red Chili Powder adjust to your spice level
  • 1 pinch Turmeric Powder

Other Ingredients

  • ¾ teaspoon Salt adjst to your taste
  • 1 tablespoon Sesame Seeds for seasoning
  • 5 tablespoon Tomato Ketchup
  • 2 teaspoon Oil for frying vegetables
  • 2 tablespoon Butter

Instructions 

Preparation

  • Take the Potato in the pressure cooker and pressure cook them over 3-4 whistles. Once the steam is released take out the potatoes, peel the skin and keep it ready.
  • Finely chop onion, tomato, carrot and capsicum. Peel the skin and chop the ginger. Also coriander leaves finely. 

Preparing Toast Masala

  • Heat oil in a pan and add chopped onions along with a pinch of salt and saute them well. Add ginger and saute it for a minute
  • Add chopped tomato, carrot and capsicum pieces and stir fry in medium-high flame for 5-6 minutes and the vegetables would become tender by then.
  • Add red chilli powder, coriander powder and mix well. Now mash the cooked potatoes, add them to the vegetables and mix well. Add the salt and mix well. Finally add chopped coriander leaves and remove it from flame.

Making of Toast

  • Take a bread and add a teaspoon of tomato ketchup and spread it nicely with a bread spreadknife. Add a teaspoon of vegetable masala (toast masala) and spread it nicely till the edges. Sprinkle some sesame seeds on the top.
  • Using a knife cut the bread diagonally to make 2 triangles. Now we are going to toast the vegetable masala bread in a tawa. Heat a tawa and add ¼ teaspoon of butter, place one triangle of bread on the butter. 
  • Again add little butter and add another piece of the triangle bread and allow the breads to toast in low flame till one side of the bread becomes toasted and crispy. Add little butter again and flip the breads to other side and toast it on the other side.
  • Remove the toasted bread from tawa and repeat the same steps till the rest of masala
  • The crispy vegetable toast is now ready to serve hot with tomato ketchup or any dipping.

  • Tomato Ketchup is optional, we are using it as a bread spread. You can also substitute with Peanut Butter, mint chutney or homemade tomato chutney
  • You can replace butter with oil if you are health conscious
