Brinjal Stuffed Curry

Not many people like the Brinjal. But you can make them love brinjal by cooking it in a right manner. Try Brinjal stuffed curry and i hope every one started loving brinjal (Kathirikkai) there after.


Ingredients:
Brinjal(small size) - ½ KG
Salt - To Taste
Tamarind - 1 pinch

For Grinding:
Oil - 1 teaspoon
Red Chilli - 2
Coriander seeds - 3 teaspoon
Channa dal - 3 teaspoon

For Seasoning:
Oil - 1 teablespoon
Mustard seeds - 1 teaspoon


Method:

  • Soak the tamarind in water and extract the juice and keep it aside
  • Chop the brinjals vertically and soak it in water and keep it aside
  • Heat the oil in pan, add red chilli, coriander seeds, channa dal and fry till the dal turns golden brown color
  • Remove from flame and add these to a mixer and grind it to a nice powder
  • Take each brinjal and stuff 1 teaspoon of the ground masala
  • Heat oil in pan, and add mustard seeds once the oil is hot. When the mustard seeds begins to sputter, add the stuffed brinjals and salt and mix it well
  • To this add tamarind extract and allow the mixture to cook completely.
  • Fry the brinjals deeply and remove it from flame
  • The mouth-watering Brinjal Stuffed Curry is ready to serve. This goes well with Moorkuzhambu and Thengai Araitha Kuzhambu
