Most of the time, thinking of kids friendly lunch box dishes are our main challenge. Most of the times, kids tend to bring back most of their lunch back because of many silly reasons. I personally feel that  right dishes with perfect taste always makes them love their lunch. I try to experiment with many dishes and for my kids, and personally my kids love all rice varieties. Especially Cabbage rice and carrot rice are their favorite. This Cabbage Rice is pretty simple to make. Most of us make this same method and prepare poriyal but with this poriyal we can add rice and enrich with ghee and you won't believe kids will love this awesome dish and for us the purpose of making them eat a vegetable also gets completed with this rice!

Cabbage Rice, a quick, easy to make healthy rice variety which is a perfect recipe for Kid's Lunch Box. Cabbage along with onions, peas are sauteed with salt, green chili and ginger. To this sauteed veggies, cooked rice is added and gently mixed. A very mild but so delicious rice with richness of vegetables.

Ingredients

  • 1 cup Rice Cooked
  • 2 cups Cabbage Shredded
  • 1 nos Onion Sliced
  • ¼ cup green peas
  • 2 nos Green Chili Slit
  • 1 teaspoon Ginger Finely Chopped
  • To taste Salt
  • 1 teaspoon Ghee

Tempering

  • 1 teaspoon Mustard seeds
  • ½ teaspoon Cumin Seeds
  • 2 tablespoon Oil
  • Few Curry leaves

Instructions 

  • Heat oil in a pan. Add mustard seeds and one they start to sputter, add cumin seeds.
  • Then, add curry leaves, chopped ginger and slit green chilies and fry for few seconds
  • Then, add finely sliced onions and sauté.
  • One the onions are translucent, add shredded cabbage along with green peas to the pan. Add salt and mix well. Keep the flame in low and stir-fry the cabbage till the cabbage is cooked and becomes soft and tender.
  • Once, the cabbage is cooked, switch off the flame. Add the cooked rice and gently mix everything completely.
  • Then finally add ghee and serve hot! Perfect kids lunch box dish ready!

Instructions with Step by Step Pictures:

  • Gently mix everything completely

  • Then finally add ghee and serve hot! Perfect kids lunch box dish ready!
