Chapati Upma, a delicious savory upma made with leftover Roti. Roti is shredded into thin strips which is then concocted with onion-tomato-mixed veggies curry to make this delicious Chapati Upma. Loaded with veggies, this upma is a perfect balanced food for Kid's lunch box. Whenever I have leftover Roti, I like to make either simple upma or noodles with the roti. For noodles we need soy sauce, red chili sauce and vinegar but for upma its very simple and quick to make  If you kid don't eat veggies, we can just make with onion-tomato and exclude the veggies.

Tips for making Chapati Upma

  1. Roll the chapati tightly and then slice the roti. We can also just tear the roti roughly.
  2. Cook the veggies till they are tender but also little crispy.
  3. Adjust the spices and masala powders according to your spice level.
  4. Add handful of water after adding shredded roti so that roti gets nicely blended with veggies.
  5. Roti will have salt already in it so be mindful to add salt that is necessary for the veggies.

You may also want to try:

  • Idli Dosa Batter : This recipe shows the conventional and traditional way to make Idli / Dosa Batter. The ratio of the rice and dals, fermentation are the key aspects to get perfect Idli/ Dosa.
  • Neer Dosa, a soft, think crepe made with rice batter. Unlike conventional dosa batter which uses urad dal along with idli/parboiled rice, this Neer dosa is made only with raw rice. This dosa batter doesn’t need fermentation. Relish these soft dosa with chutney/sambar of your choice!

Ingredients

  • 5 nos Chapati / roti
  • 1 no Onion Finely Chopped
  • 1 no Tomato Finely Chopped
  • 1 no Carrot Finely Sliced
  • 1 no Capsicum Thinly Sliced
  • 1 Cup Cabbage Shredded
  • 1 teaspoon Ginger Garlic Paste
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Coriander Powder
  • ½ teaspoon Garam Masala
  • Few Curry leaves
  • 1 tablespoon Coriander Leaves Copped for Garnishing
  • ½ teaspoon Salt

For Tempering

  • 2 tablespoon Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds

Instructions 

  • Take the left over chapati/roti. Roll it tightly and slice the chapati. Keep the Roti slices aside.
    5 nos Chapati / roti
  • Heat oil in a pan. Add mustard seeds and cumin seeds. Allow it to sputter.
    2 tablespoon Oil, 1 teaspoon Mustard Seeds, 1 teaspoon Cumin Seeds
  • Add onions and sauté the onions till translucent. Add ginger-garlic paste and sauté along with onions
    1 no Onion, 1 teaspoon Ginger Garlic Paste
  • When the onions are transparent, then add chopped tomato to the pan and give a good mix.
    1 no Tomato
  • When the tomatoes are mushy, add shredded cabbage, sliced carrots, capsicum and give a good mix.
    1 no Carrot, 1 Cup Cabbage, 1 no Capsicum
  • Now, add turmeric powder, sat, red chili powder and coriander powder. Give a good mix.
    1 teaspoon Red Chili Powder, 1 teaspoon Coriander Powder, ½ teaspoon Salt
  • Close the pan with a lid and allow the veggies to get cooked and becomes tender. Open the lid occasionally and mix the veggies so that it doesn't get burnt.
  • When the veggies are almost cooked, add the sliced roti.
  • Also add garam masala and few curry leaves. Add handful of water and give a good mix. Cover the pan with a lid and allow everything to get cooked for couple of minutes.
    ½ teaspoon Garam Masala, Few Curry leaves
  • Finally garnish with coriander leaves.
    1 tablespoon Coriander Leaves
  • The delicious Chapati Upma is now ready to serve!
