Pori Upma is a very delicious evening time snack made with puffed rice, enriched with veggies. Quick and easy to make upma. Its also called as mandakki oggarane, uggani or murmura upma.

Want an easy and delicious tea time snack for a nice evening? How about trying Pori upma? Its really very easy and quick to make and yet very yummy and healthy. Most of us have puffed rice all time in our home as it is very easy to make bhel puri or just give the plain pori for kids as a snack. Using the same puffed rice, adding few more veggies and make it a little healthier and also tasty.
This Puffed rice upma is also called Murmura uggani/marmaral upma/Puffed rice Upma. Its a popular breakfast recipe in Rayalsema and bordering districts of Andhra Pradesh and Karnataka. Its generally served with Masal vada or Mirchi Bajji. The preparation is almost same as we make for Poha Upma. This is a wholesome and filling meal with an equal amount of protein ,carb, and other nutrients.

Some helpful tips for making Puffed Rice Upma:

  1. Choice of Puffed Rice is very vital for making this upma.  There are 2 types of Puffed Rice available in the market. One variety is a little light,soft while the other variety is a little thick,firm. Always try to use the firm and thick Puffed Rice to prepare this Upma other wise your Upma will become soggy and sticky.
  2. Washing and squeezing of puffed rice is enough. Soaking is not necessary.
  3. Skip peanuts, if adding corn or any crunchy vegetable.
  4. We can roast chickpeas and dessicated coconut and grind it to a fine powder and add it
  5. You can add lemon to it before serving.
  6. Serving Suggestions: Serve with hot tea/coffee also with Mirchi Bajji

Ingredients

  • 4 Cups Puffed Rice (Pori) 1 Cup - 250ml
  • 1 Onion Finely chopped
  • 1 Carrot Finely Chopped
  • 2 tbsp Green Peas
  • 2 tbsp Peanuts
  • 1 tsp Lemon Juice
  • 1 tsp Ginger Chopped
  • 1 tsp Salt Adjust As Needed
  • 1 tbsp Coriander Leaves Finely Chopped

For Tempering

  • 1 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin Seeds
  • 1 tsp Split Urad Dal
  • Few Curry

Instructions 

  • Heat a pan and add peanuts and dry roast them till they are hot in medium flame. Set this aside and allow it to cool. ‘Take the puffed rice in a colander and wash it thoroughly under running water and then squeeze it and drain the water and keep the puffed rice aside
  • Heat a pan and add oil, add mustard seeds and cumin seeds and when they starts to sputter, add urid dal and roast them till they are golden brown color. Then add the chopped green chilli and curry leaves. Then, add the chopped onions and ginger and saute them till the onions turns translucent. 
  • Then add the chopped carrot and green peas and stir-fry for couple of minutes. Add turmeric powder and salt and add 1/4 cup of water and allow the veggies to cook completely. 
  • Peel the peanuts and add it to the mixer jar and give a pulse to grind them coarsely. Set this aside. When the veggies are cooked, add the washed and squeezed puffed rice to the pan and give a good mix
  • Garnish with coriander leaves and switch off the flame. Squeeze 1/2 lemon and mix well.
  • Finally add ground peanuts and mix well and take it to a serving bowl
  • Serve the delicious Pori Upma with hot coffee / tea.
