Sweet Potato Stir Fry (SakkaraVelli Kizhangu Poriyal), a yummy poriyal variety. Very often we tend to do Potato stir fry but sweet potatoes we generally don't prefer for the obvious reason of its sweetness. But actually sweet potatoes are more healthier than normal potatoes. So we should frequently use sweet potatoes in our cooking. Lets see the recipe now...

Sweet Potato Stir Fry (SakkaraVelli Kizhangu Poriyal)
Sweet Potato Stir Fry (SakkaraVelli Kizhangu Poriyal)
Ingredients:
Sweet Potato 4-5 medium sized
Turmeric Powder ¼ teaspoon
Red chilli powder ¼ teaspoon
Hing a Pinch
Grated Coconut 1 tablespoon
Salt To taste
Curry Powder 1 teaspoon
For Seasoning:
Cooking oil 2 teaspoon
Mustard seeds 1 teaspoon
Split Urid dal ½ teaspoon
Curry leaves few
Method:
  1. Wash and peel the sweet potatoes and chop it into small cubes and soak it in water
  2. Heat oil in a pan and add mustard seeds when the oil is hot. When the mustard seeds starts to sputter, add cumin seeds and when the cumin seeds starts to sputter, add uriddal and curry leaves and stir well for 10 seconds
  3. Add the chopped sweet potatoes and stir fry in high flame for 2 minutes along with hing and turmeric
  4. Keep the flame in medium and stir occasionally and allow the sweet potatoes to cook completely. When the sweet potatoes are cooked completely, add curry powder and mix well and keep in low flame for 2 minutes. Finally add grated coconut and stir fry in high flame and then remove from flame
  5. The delicious Sweet Potato Stir Fry (SakkaraVelli Kizhangu Poriyal) is ready to serve with hot rice
