Cabbage Thoran is  made with coconut, curry leaves and chilli. Very easy and quick to make healthy and yummy Thoran that tastes good with any South Indian Main Course.

What is Thoran?

Thoran, Kerala's best loved Stir-Fry Preparation, is a Coconut-based vegetable curry from Kerala Cuisine. It is usually served with Steamed rice. Its one of the most important and common dish as part of Onam Sadya. Thoran is a dry dish traditionally made of finely chopped vegetables such as cabbage, yardlong bean and other bean varieties, unripe jackfruit, bittergourd or yam. For festivals and other auspicious occasions, we can exclude onion, but we can use it on the regular days.

Thoran Vs Poriyal

In Tamil Nadu we primarily cook Poriyal in normal cooking oil, in Kerala you just can't do away with cooking in coconut oil. Also the poriyal we do in Tamilnadu, we use broken red chili/green chili for spice and finally garnish with little coconut. Also we cook the vegetable first with water and then once the moisture is absorbed, we will garnish with coconut. But its always a good practice to sauté (Stir-fry) the veggies instead of cooking in water. The crunchiness of the veggie will actually gives more flavor than over cooked vegetable.

Variations

  • Shredded Vs. Chopping - In this recipe, i have shredded the cabbage. I like shredded / grated cabbage than the chopped one. But you can also chop the cabbage.
  • Adding onion is optional.

Keralan Cabbage Thoran is a cabbage dish made with coconut, curry leaves and chilli. Very easy and quick to make healthy and yummy Thoran that tastes good with any South Indian Main Course.

Ingredients

  • 300 gms Cabbage Shredded or Chopped
  • 10 Shallots / Baby Onions Finely Chopped
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Salt As Needed

For Grinding

  • ⅓ Cup Grated Coconut
  • 2 Green Chili
  • 1 teaspoon Cumin Seeds

For Tempering

  • 1 tablespoon Coconut Oil
  • 1 teaspoon Mustard Seeds
  • Few Curry Leaves

Instructions 

Chop the Cabbage

  • Shred / Grate the cabbage. You can also slice the cabbage. 

Grinding Process

  • Take grated coconut, cumin and green chili in a mixer jar and grind it without adding water. Set this aside

Tempering Process

  • Heat oil in a pan. Add mustard seeds and allow it too sputter. Add curry leaves and sauté for few seconds 

Sautéing Onion

  • Now, add chopped shallots and sauté till it turns golden brown. 

Cooking Cabbage

  • Add cabbage to pan along with turmeric and salt and stir-fry for 2 mins. 
  • Then cover & Cook cabbage till it is soft and not mushy
  • Once the cabbage is cooked, add the ground coconut-spice and gently mix the cabbage. Keep in flame for 2 mins and switch off the flame
  • Serve the delicious Kerala Style Cabbage Stir-Fry (Cabbage Thoran) with Rice/ Sambar/Rasam and enjoy the tasty Thoran

Notes

  1. We can exclude onions. Onions are optional but its conventional in Kerala Style Thoran
  2. Use coconut as mentioned in the recipe or more than that. Do not reduce, The coconut with chili and jeera are the main flavor adding ingredients

Method with Step by Step Pictures:
