Dates and nuts roll, also referred as Khajur Roll is a nutrient packed sugarless sweet variety. Packed with iron rich dates and crunchy nuts this is one of the easy to make sweet. The sweetness of the dates itself is sufficient for these rolls. Most of the traditional sweet varieties need considerable effort. Because of the complexity or the effort needed to make traditional recipes, many of us are choosing instant or easy recipes. This dates and nuts roll is one such easy recipe at the same time very healthy and rich too!

Tips to make Dates and Nuts roll:

  • Dry roast nuts just till they are warm. No need to fry too long.
  • We can Grind the dates and sauté in ghee. But dates easily get sautéed in ghee and becomes soft.
  • Cool the dates and nuts mixture till you are able to handle with your hand and then roll like a log.
  • Refrigerated rolled log for atleast an hour.
  • Cut and serve the roll. Store in airtight container.

Dates and Nuts Roll is a delicious Indian recipe served as a Dessert. This dates and nuts roll is a very healthy,easy to make, diabetic friendly, Indian sweet. It is popularly known as Khajoor katri (In Hindi) among North India. This is a very healthy and nutrition rich sweet. We don’t need to add any sugar for this roll. The sweetness of dates are enough. Dates along with our favorite nuts makes this roll so scrumptious. A very quick and easy to make sweet for any occasions!

Ingredients

  • 1½ cups Dates Chopped
  • ¼ cup Cashews Chopped
  • ¼ cup Almonds Chopped
  • ¼ cup Walnuts Chopped
  • ¼ cup Pistachios Chopped
  • 2 teaspoon Ghee
  • 2 teaspoon Grated Coconut Use Dry Coconut

Instructions 

  • First heat a pan and dry roast all the chopped nuts till they are warm. Take these roasted nuts aside.
  • Again in the same pan, heat the ghee and add the chopped dates and in a medium flame sauté the dates till they are gooey and combined well. We can also grind the dates and then sauté them in ghee.
  • When the dates are nicely combined and becomes like a thick mixture, add the nuts and mix them well so that they get nicely combined with the dates.
  • Turn off the flame and allow the dates and nuts mixture to cool off till you can handle with the hands.
  • Take a parchment paper or a aluminum foil and place the dates and nuts mixture on it.
  • Then using your hands shape them into a cylinder or like a tree log shape.
  • We can sprinkle dry grated coconut now and coat the dates cylinder.
  • Cover the parchment paper or foil and keep it in refrigerator for an hour.
  • After 1 hour, take out the foil and unwrap it. Then using a sharp knife cut them like rolls.
  • Store the delicious Dates and Nuts Roll in an air-tight container and enjoy the healthy sweet!

  • Store the delicious Dates and Nuts Roll in an air-tight container and enjoy the healthy sweet!
