Peanut Salad is concocted with Cooked Raw peanuts, served with freshly chopped onions, tomatoes, grated carrot, mango, cucumber along with spices. A quick and tummy filling healthy snack. Perfect for after-school snack or even for school snack. Kids leave school early and hence morning snack is very important for them. This kind of Salad will be a good filling. Also salad will increase our protein intake and helps to stay fit. Try this easy to make less cooking Peanut Salad!

Peanut Salad is one of the quick and easy recipe. The ingredients that goes into this salad are very simple and It's filled with full of indian flavor. Very good and healthy salad for to enjoy the evening with a cup of coffee

Ingredients

  • 1 cup Raw Peanuts

Salad Toppings

  • 2 tablespoon Onion finely chopped
  • 2 tablespoon Tomato finely chopped
  • 2 tablespoon Raw Mango finely chopped
  • 2 tablespoon Cucumber finely chopped

Other Ingredients

  • ½ teaspoon Pepper Powder
  • ¼ teaspoon Red Chili Powder
  • Coriander Leaves chopped, for garnishing
  • 1 teaspoon Salt adjust to your taste
  • 1 tablespoon Lemon Juice

Instructions 

Soaking the Peanuts

  • Soak the raw peanuts overnight. Alternately you can soak the peanuts in the hot water for about 4 hours.

Cooking the Peanuts

  • Next day, drain water and add fresh water. Add salt and pressure cook for 3-4 whistles. Check the peanuts if they are soft. Usually 3-4 whistles are good enough. If the peanuts are still hard, then cooke for few more whistles.
  • Drain the water and set aside

Start making the Salad

  • To the cooked peanuts, add finely chopped onions, tomato, mango, cucumber and carrot. 
  • Add pepper powder, red chili powder and salt and toss everything well
  • Add lemon juice and toss once. Finally garnish with coriander leaves
  • Delicious Peanut Salad is ready to serve!

Notes

  1. Serve this salad fresh, as soon as it's prepared. It may release water if we keep it for longer time
  2. Add / Modify the toppings based on your liking. 
  3. Addition of Chaat Masala (readymade) is optional.

Method:
